ALMOND CHICKEN STRIPS

Whether I serve these nutty chicken strips as an appetizer or entree, there are never leftovers.

1/4 cup cornstarch
1 teaspoon sugar
1/2 teaspoon salt
4-1/2 teaspoons sherry or chicken broth
2 egg whites, lightly beaten
1-1/2 cups ground almonds
1 pound boneless skinless chicken breasts, cut into 1/2-inch strips
2 tablespoons canola oil
Honey mustard, optional

Steps:

  • In a shallow bowl, combine the cornstarch, sugar, salt and sherry; gradually stir in egg whites. Place almonds in another shallow bowl. Dip chicken in egg white mixture, then coat with almonds., In a large skillet or wok, stir-fry chicken strips in oil for 5-7 minutes or until no longer pink; drain on paper towels. Serve with honey mustard for dipping if desired.

Baked chicken with a creamy soup sauce, topped with crazy, nutty toasted almonds! Serve with rice if desired.

8 skinless, boneless chicken breast halves
1 pinch garlic powder
1 (10.75 ounce) can condensed cream of chicken soup
1 (5 ounce) can evaporated milk
8 ounces toasted almonds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken pieces in a lightly greased 9x13 inch baking dish. Season with garlic powder to taste and bake in the preheated oven for 1/2 hour.
  • In a small bowl mix together the soup and milk. Pour mixture over chicken and bake for another 1/2 hour. Meanwhile, toast almonds and add to chicken during the last few minutes of baking.

3 tablespoons soy sauce
¾ teaspoon salt
1 teaspoon cornstarch
2 teaspoons sherry
3 pounds chicken, skin removed, meat removed from bones and cut into bite sized pieces
1 ½ cups peanut oil for frying
1 cup blanched almonds
⅓ cup sliced mushrooms
½ cup diagonally sliced bamboo shoots
½ cup diagonally sliced celery
¼ cup thinly sliced onion
10 whole water chestnuts, thinly sliced
¼ cup peanut oil
⅓ cup chicken stock

Steps:

  • Mix the soy sauce, salt, cornstarch, and sherry in a large bowl. Stir in chicken; cover and refrigerate.
  • Heat 1 1/2 cups of the peanut oil in a large, deep skillet. Fry almonds in the oil until golden, about 1 minute. Drain fried almonds on a paper towel.
  • Drain all but 3 tablespoons of oil from the skillet. Stir in the mushrooms, bamboo shoots, celery, onion, and water chestnuts. Cook and stir vegetables for 1 minute. Remove from skillet.
  • Heat 1/4 cup oil in the skillet. Cook and stir the marinated chicken in hot oil until no longer pink in the center, and the juices run clear, 3 to 5 minutes. Stir in cooked vegetables, chicken stock, and reserved soy sauce mixture; simmer until thickened, 1 to 2 minutes. Stir in fried almonds before serving.

Love one dish meals! This has lots of veggies and chicken. If you have everything lined up and ready to go in the wok, this comes together quickly. If you don't have a wok, you can use a really hot Dutch oven. I don't usually serve it over rice to save carbs, but I'm sure you can.

1 1/2 teaspoons soy sauce (I use reduced sodium)
1 teaspoon fresh gingerroot, minced
1/2 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon dry sherry
2 1/3 cups chicken breasts, diced (about 1 1/2 lbs)
2 1/2 tablespoons cornstarch
2 tablespoons vegetable oil, divided
1 cup celery, chopped
1/2 lb fresh snow pea, ends snipped
1 (8 ounce) can bamboo shoots, drained and chopped
1 (8 ounce) can water chestnuts, drained and chopped
4 ounces mushrooms, sliced
1/2 cup slivered almonds, toasted
2 green onions, cut into 1 1/4 inch pieces

Steps:

  • Combine the first five ingredients in a large bowl; add the chicken and stir well. Let stand 10 minutes. Sprinkle the cornstarch over the chicken mixture, stirring well. Set aside. (Use this time to chop vegetables).
  • Pour 1 tbsp oil around the top of a preheated wok, coating the sides; heat at medium-high (325 degrees) for 1 minute.
  • Add the celery and mushrooms and stir fry for 1 to 2 minutes. Add the snow peas, and stir fry 1 to 2 minutes. Add the bamboo shoots and water chestnuts, and stir-fry for 1 to 2 minutes. Remove the vegetables from the wok; set aside, and keep warm.
  • Pour the remaining 1 tbsp oil around the top of the wok, coating the sides; heat at medium high for 1 minute. Add the reserved chicken mixture; stir fry for 3 to 4 minutes. Add the vegetable mixture, almonds, and green onions, and stir fry 1 to 2 minutes or until thoroughly heated.

This recipe is very, very tasty, and very simple to make. If anyone likes chicken, almonds, and needs a big twist to dinner, it's all right here! It's tangy and sweet and very good. It makes a great appetizer for 6 to 16 people.

1 tablespoon Dijon mustard
1 tablespoon honey
1 tablespoon vegetable oil
1 tablespoon lemon juice
4 skinless, boneless chicken breast halves - cubed
¼ cup chopped toasted almonds
16 bamboo skewers, soaked in water for 20 minutes

Steps:

  • In a medium, nonreactive bowl, blend Dijon mustard, honey, vegetable oil, and lemon juice. Place chicken in the mixture, stirring to coat. Cover, and, turning occasionally, allow to marinate in the refrigerator at least 1 hour.
  • Preheat an outdoor grill for high heat, and lightly oil grate. Soak wooden skewers in water for about 20 minutes.
  • Thread chicken onto skewers and discard marinade. Arrange on the prepared grill, and cook 7 to 10 minutes, until no longer pink and juices run clear.
  • Remove skewers from heat, and quickly roll in the almonds to lightly coat chicken.

1 (1 lb) boneless skinless chicken breast, cut into 1 1/2-inch cubes
vegetable oil, to deep fry
1 egg white
1/2 teaspoon soy sauce
1/4 teaspoon salt
1/2 teaspoon sugar
1/8 teaspoon white pepper
1 pinch ground cinnamon
1 pinch ground cloves
3/4 cup flour
3/4 cup chicken broth or 3/4 cup water
2 tablespoons cornstarch
1 teaspoon salt
1 teaspoon baking soda
1 cup toasted slivered almonds
1/2 teaspoon almond extract

Steps:

  • In medium bowl, mix together egg white, soy sauce, salt, sugar, pepper, cinnamon, and cloves; stir chicken pieces into mixture.
  • Marinate, covered, in the refrigerator for 20 minutes.
  • Mix together the flour, chicken broth, cornstarch, 1 teaspoon salt, the baking soda, almonds and almond extract; stir chicken into batter until well coated.
  • In wok, heat 1 1/2-inches oil to 350°F.
  • Fry chicken pieces, about fifteen at a time, turning frequently, until light brown (2-3 minutes); drain on paper towels.
  • Increase oil temperature to 375°F.
  • Fry chicken all at once until golden brown (1 minute); drain on paper towels.
  • Serve with dipping sauce.
