This apricot almond cake combines two delicious flavors in one chewy, sweet and tender cake.

3/4 cup apricot preserves
2 tablespoons almond paste, crumbled
Cake
4 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups sugar
3/4 cup Land O Lakes® Butter softened
3/4 cup sour cream
5 large Land O Lakes® Eggs
3/4 cup milk
1 teaspoon almond extract
Glaze
3/4 cup powdered sugar
1 to 2 tablespoons apricot preserves
1 to 2 tablespoons milk

Steps:

  • Heat oven to 350°F. Grease and flour 10-inch angel food cake (tube) pan or 12-cup Bundt pan; set aside.
  • Combine preserves and almond paste in food processor bowl fitted with metal blade or 5-cup blender container. Cover; process 30-60 seconds or until smooth. Set aside.
  • Combine flour, baking powder and salt in bowl; set aside.
  • Combine sugar and butter in another bowl. Beat at medium speed, scraping bowl often, until creamy. Add sour cream and eggs; continue beating until smooth. Add flour mixture, alternately with 3/4 cups milk and almond extract, until well mixed.
  • Spread half of batter into prepared pan. Spoon filling over batter in pan; spread remaining batter on top of filling. Swirl filling into batter using a spatula or knife.
  • Bake 55-65 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes; invert onto serving plate. Cool completely.
  • Combine powdered sugar and enough apricot preserves and milk for desired glazing consistency in bowl. Drizzle over cooled cake.

1/2 cup fine yellow cornmeal
1/2 cup cake flour
1 teaspoon baking powder
1 stick (4 ounces) unsalted butter, softened
1/4 cup almond paste, cut into half-inch pieces
1/2 teaspoon pure vanilla extract
1 1/4 cups confectioners' sugar, plus more for dusting
4 egg yolks
2 eggs
1/4 cup sour cream

Steps:

  • Preheat oven to 350 degrees F.
  • Butter and flour an 8-inch round cake pan.
  • In a medium bowl, whisk together the cornmeal, cake flour and baking powder. Using a stand mixer with a paddle attachment, beat the butter and almond paste on high speed until smooth, about 3 minutes. Reduce speed to low and add vanilla extract and slowly pour in confectioners' sugar. Mix until light and fluffy, about 3 minutes. Raise speed to high and add the egg yolks and whole eggs, one at a time. Reduce speed to medium and add the sour cream and dry ingredients and mix until just incorporated.
  • Pour the batter into the prepared cake pan and smooth the surface with a spatula. Bake in the lower third of the oven for 35 minutes, or until the cake is golden and pulls away from the sides of the pan. Transfer pan to a wire rack and let cool. Remove from pan and dust with confectioners' sugar.

1 cup butter, softened
2 cups sugar
3 large eggs
1 cup sour cream
1 teaspoon almond extract
2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup slivered almonds, divided
1 jar (10 to 12 ounces) apricot preserves, divided
Confectioners' sugar, optional

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add the eggs, sour cream and extract; mix well. Combine the flour, baking powder, baking soda and salt; add to the creamed mixture and mix well. , Spread half of the batter in a greased and floured 12-cup fluted tube pan. Sprinkle with half of the almonds. Spread half of the preserves to within 1/2 in of the edges. Cover with remaining batter. Spoon remaining preserves over batter to within 1/2 in of edges. Sprinkle with remaining almonds. , Bake at 350° for 55-60 minutes or until toothpick inserted in the center comes out clean. Cool in pan for 15 minutes before inverting onto a serving plate. If desired, dust with confectioners' sugar.

2 cups white sugar
4 eggs
1 ½ teaspoons almond extract
1 ⅔ teaspoons vanilla extract
2 ½ cups all-purpose flour
2 teaspoons baking powder

½ cup ground almonds
1 cup milk
¼ cup milk
¾ cup white sugar
½ teaspoon almond extract
½ cup toasted sliced almonds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan. Mix together the flour, baking powder, salt and ground almonds. Set aside.
  • In a large bowl, cream together the butter and 2 cups sugar until light and fluffy. Beat in the eggs one at a time, then stir in the 1 1/2 teaspoons almond extract and vanilla. Beat in the flour mixture alternately with 1 cup milk, mixing just until incorporated. Pour batter into prepared pan.
  • Bake in the preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool for 10 minutes and invert on a wire rack. Cool 10 minutes longer. Place rack on waxed paper. Combine 1/4 cup milk, 3/4 cup sugar, 1/2 teaspoon almond extract and toasted sliced almonds; pour over warm cake.

1/2 lb unsalted butter
2 cups granulated sugar
2 eggs, room temperature
1 teaspoon almond extract
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 (8 ounce) container sour cream, room temperature
1 cup sliced almonds
1 (12 ounce) bottle apricot preserves

Steps:

  • Preheat oven to 350 degrees F, then greast & flour 10" bundt pan.
  • With electric mixer, cream together the butter & sugar.
  • Add eggs, one at a time, before adding extract.
  • In another bowl, sift or whisk together flour, baking powder & salt.
  • Add flour mixture to butter mixture alternately with sour cream.
  • Sprinkle 1/2 cup almonds on bottom of pan.
  • Pour half the batter over nuts.
  • Arrange remaining nuts over batter.
  • Drop spoonsful of apricot preserves over the nuts, but not touching side of pan.
  • Pour remaining batter over the preserves.
  • Bake for 55 minutes.

1/2 c butter, softened
3/4 c sugar
2 medium eggs
1 Tbsp grated orange rind
3/4 Tbsp almond extract
3/4 c slivered, dried apricots
1 1/2 c all purpose flour
1/2 c ground almonds
1 1/2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 1/4 c sour cream
GLAZE
2/3 c sugar
2 Tbsp orange juice
1/4 tsp almond extract

Steps:

  • 1. Grease 10 cup tube pan or Bundt Pan; set aside.Preheat oven to 325 degrees F.
  • 2. In large bowl, beat butter with sugar until fluffy,beat in eggs, one at a tine; beat in orange rind and almond extract. Stir in apricots. In separate bowl, whisk together flour,ground almonds,baking powder, baking soda, and salt; stir half of this mixture into butter mixture. Stir sour cream into butter mixture; stir in remaining flour mixture. Scrape into prepared pan.
  • 3. Bake until cake tester inserted in center of cake come out clean, about 45 minutes. Let cool in pan on rack for 10 minutes. Remove from pan to rack.
  • 4. GLAZE: In small bowl, whisk together sugar, orange juice, and almond extract; brush over hot cake. Let cool completely.

CHOCOLATE & ALMOND MARBLED BUNDT CAKE

180g butter, softened, plus extra for greasing
225g caster sugar
¾ tsp almond extract
2 tsp baking powder
180g plain flour
75g ground almond
3 large eggs
2 tbsp milk
3 tbsp cocoa powder mixed with 3 tbsp hot water to make a paste
100g dark chocolate chip
30g icing sugar, to dust
1.5l (or bigger) bundt cake tin

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Thoroughly brush a 1.5 litre bundt tin with melted butter.
  • Cream the butter and sugar together until light and fluffy. Stir in the almond extract.
  • Mix together the baking powder, flour and ground almonds. Beat in one egg at a time, adding a spoonful of the flour mixture in between. Repeat until all three eggs have been added, then fold in the remaining flour mixture and stir in the milk.
  • Spoon half of the cake batter into a separate bowl and mix in the cocoa paste. Add the chocolate chips to the other half of the mixture. Add spoonfuls of each of the batters alternately to the tin and drag the handle of a teaspoon through the mixture to create a marbled effect.
  • Bake for around 40 minutes and then test the cake to see if a skewer inserted into the deepest part comes out clean. The cake will take 40 - 50 mins, depending on the proportions of your bundt tin.
  • Let the cake cool in the tin for 10 minutes before turning out onto a cooling rack. Once cooled, dust the cake with a little icing sugar.

2 1/2 cups sugar
2 eggs
2 1/2 teaspoons almond extract
1 1/3 cups milk
1 cup butter, softened at room temperature
2 1/2 cups flour
1 teaspoon baking powder
1/4 teaspoon cinnamon
chopped almonds
raw sugar

Steps:

  • Preheat oven to 350°F; grease and flour a bundt pan.
  • Beat sugar, egg, almond extract, milk and softened butter together.
  • Gradually add flour, baking powder and cinnamon.
  • In bottom of greased bundt pan, sprinkle almonds and raw sugar to make a nice crunchy topping.
  • Pour cake batter over almonds/sugar.
  • Bake for 50 minutes or until toothpick comes out clean from center of cake.
  • Cool for 15-20 minutes, then remove from pan.
  • Cool on wire rack.
