HOLIDAY GOAT CHEESE LOG
This started as a Christmas treat, but was so popular that it's now served at all special family gatherings. The idea came from a recipe in a Colonial Williamsburg cookbook, but I modified it to get rid of peppercorns and add fruit. Garnish with parsley sprigs and serve with crackers.

Steps:
- Pulse almonds in the bowl of a food processor until chopped. Add parsley and chives; continue to pulse until incorporated. Add cherries and process until everything is finely chopped and you have a nice mixture of red and green.
- Pour nut mixture onto a flat work surface and spread into a thin layer.
- Roll goat cheese log in the nut mixture until fully covered. Carefully pick it up and tap the ends of the log into the nut mixture to cover. Place on a serving dish.

- In a medium-sized mixing bowl, combine cream cheese, salsa and chili seasoning mix. Mix until well combined, then shape it into a log or ball. Cover the prepared ball or log with chopped pecans, then with the cheese. Refrigerate the log until you are ready to serve it.

EASTER CARROT CHEESE LOG
No carrots are in it, but this eye-catching appetizer was a big hit this Easter (2015). Not too salty and not too spicy... just right! And for me the hostess, it was quick and easy to make - an extra bonus! Serve with crackers, pita chips, or toast. Create your own shape to accent your next holiday or special occasion table.

- Chop black olives and green olives in a food processor or a food chopper.
- Mix cream cheese, 4 ounces Cheddar cheese, chopped olives, and taco seasoning together in a bowl using an electric mixer on low speed. Increase speed to medium and mix until well combined.
- Transfer cheese mixture to a flat serving plate. Shape cheese mixture into a 2-inch-thick carrot shape using a silicone bowl scraper. Press 2 ounces Cheddar cheese over the entire "carrot". Insert parsley sprigs into the top of the "carrot". Remove excess cheese from the plate using a damp napkin. Cover with plastic wrap and refrigerate for at least 2 hours.

GOAT CHEESE, ALMOND, AND HONEY TARTINE
I had this in a little restaurant in Strasbourg called L'Epicerie and it was tasty! The honey cuts through the pungent flavor of the goat cheese and the almonds create a nice crunch. Healthy, cheap, and easy to make. Cut in smaller pieces, this would make a nice appetizer, or serve it with a salad to make a light lunch or dinner (which is how I had it, and it was plenty!).

Steps:
- Slice the bread and toast it lightly.
- While the bread is toasting, place a handful of the almonds in a small hot pan and toast. (Nuts toast pretty fast, so make sure to shake often.) When the almonds are a golden brown, remove from pan.
- Spread the goat cheese on the toast, sprinkle with almonds, and drizzle with honey.

- Lay out a 15 inch piece of parchment paper. Place almond mixture in the center. Now place a 15 inch piece or plastic wrap on top of the mixture - lining up with the parchment paper unearth. Use a rolling pin and roll out the almond mixture into a 10" x 7" rectangle. Gently remove the plastic wrap and place the goat cheese log in the center of the almond rectangle.
- Roll the parchment paper and almond mixture around the goat cheese until the mixture is completely covering the cheese. Massage the seam together where the mixture meets until it is seamless. Wrap the ends of the cheese with the mixture and massage it until the ends meet.
