A low-sugar, allergy free alternative to powdered sugar frosting. Add almond or coconut extract for extra flavor. From Cooking Free

1 (12 ounce) package extra firm tofu
1/4 cup sugar
1 teaspoon lemon juice
1 teaspoon margarine
1 teaspoon vanilla
1 teaspoon vanilla extract or 1 teaspoon almond extract
1/4 teaspoon salt
1/4 teaspoon xanthan gum

Steps:

  • drain tofu for at least 2 hours.
  • discard liquid.
  • combine all ingredients in food processor until smooth.
  • use immediately.

This is an easy frosting recipe I have tweaked to my liking after a few tries. It is very tasty and is pretty easy to make.

2 cups confectioners' sugar
6 tablespoons dairy-free margarine
¼ teaspoon water
1 teaspoon vanilla extract

Steps:

  • Beat confectioners' sugar and margarine together using an electric mixer on low speed. Add 1/4 teaspoon water to increase creaminess if needed. Add vanilla extract. Increase speed to high and continue to mix until frosting is stiff. Refrigerate until ready to use.

  • Add half of powdered sugar with one spoonful of milk, vanilla extract, and salt. Mix well. Add remaining powdered sugar and mix on high until creamy frosting is achieved, about 5 minutes. If frosting is too thick, add milk 1 tablespoon at a time to reach desired consistency.
