AMAZINGLY SIMPLE TOMATO SAUCE



Amazingly Simple Tomato Sauce image

I've used this sauce for lasagna, ziti, eggplant Parmesan, meatballs, and spaghetti. You name it, it's great with it.

2 teaspoons olive oil
½ cup minced onion
2 cloves garlic, crushed
1 (28 ounce) can crushed tomatoes
2 (6.5 ounce) cans canned tomato sauce
2 (6 ounce) cans tomato paste
½ cup water
2 tablespoons white sugar
2 tablespoons chopped fresh parsley
1 ½ teaspoons dried basil
1 tablespoon salt
1 teaspoon Italian seasoning
½ teaspoon fennel seeds
¼ teaspoon ground black pepper

Steps:

  • Heat olive oil in a large, heavy pot over medium heat. Cook and stir onion and garlic in hot oil until tender, 5 to 7 minutes.
  • Stir crushed tomatoes, tomato sauce, tomato paste, and water with the onion mixture until smooth; add sugar, parsley, basil, salt, Italian seasoning, fennel, and pepper. Stir the mixture, bring to a simmer, reduce heat to low, and cook, stirring occasionally, until thickened and the seasonings have permeated the sauce, 1 hour to 90 minutes.

6 ¼ pounds tomatoes, crushed
½ cup extra virgin olive oil
1 ½ tablespoons freshly ground black pepper
1 teaspoon chili seasoning mix
1 teaspoon salt
1 tablespoon minced onion
1 tablespoon dried oregano
1 tablespoon garlic powder
1 teaspoon finely minced fresh parsley
1 teaspoon white sugar

Steps:

  • In large saucepan over low heat, combine tomatoes, olive oil, pepper, chili seasoning, salt, onion, oregano, garlic powder, parsley and sugar. Simmer 1 hour. Serve.

This is one of my most requested food wishes, my all-purpose basic tomato sauce. Whenever I make a meat sauce, this is my base. You can only stir this with a wooden spoon, otherwise it's bad luck.

¼ cup olive oil
1 onion, finely diced
1 rib celery, finely diced
1 pinch salt
4 cloves garlic, minced
2 (28 ounce) cans whole peeled San Marzano tomatoes
2 teaspoons white sugar
1 teaspoon salt
1 teaspoon anchovy paste
1 teaspoon white wine vinegar
½ teaspoon dried Italian herbs
1 pinch red pepper flakes
1 tablespoon tomato paste
2 tablespoons chopped Italian flat-leaf parsley
water, or as needed

Steps:

  • Place olive oil, onion, celery, and a pinch of salt into a large heavy saucepan or Dutch oven over medium-low heat. Cook until onions are very soft, about 15 minutes, stirring occasionally. Mix garlic into onion mixture and cook just until fragrant, about 1 more minute.
  • Pour tomatoes and their juice into a large mixing bowl and use your hands to crush the tomatoes until they look pureed.
  • Mix sugar, 1 teaspoon salt, anchovy paste, white wine vinegar, Italian herbs, and red pepper flakes into vegetable mixture. Raise heat to medium and cook just until liquid has evaporated. Stir in tomato paste and bring to a simmer. Pour in San Marzano tomatoes and parsley. Bring sauce to a simmer, turn heat to low, and simmer for 1 1/2 hours, adding a little water as the sauce cooks down. Stir occasionally.

10 ripe tomatoes
2 tablespoons olive oil
2 tablespoons butter
1 onion, chopped
1 green bell pepper, chopped
2 carrots, chopped
4 cloves garlic, minced
¼ cup chopped fresh basil
¼ teaspoon Italian seasoning
¼ cup Burgundy wine
1 bay leaf
2 stalks celery
2 tablespoons tomato paste

Steps:

  • Bring a pot of water to a boil. Have ready a large bowl of iced water. Plunge whole tomatoes in boiling water until skin starts to peel, 1 minute. Remove with slotted spoon and place in ice bath. Let rest until cool enough to handle, then remove peel and squeeze out seeds. Chop 8 tomatoes and puree in blender or food processor. Chop remaining two tomatoes and set aside.
  • In a large pot or Dutch oven over medium heat, cook onion, bell pepper, carrot and garlic in oil and butter until onion starts to soften, 5 minutes. Pour in pureed tomatoes. Stir in chopped tomato, basil, Italian seasoning and wine. Place bay leaf and whole celery stalks in pot. Bring to a boil, then reduce heat to low, cover and simmer 2 hours. Stir in tomato paste and simmer an additional 2 hours. Discard bay leaf and celery and serve.

For this six-ingredient sauce, puréed tomatoes are simmered with sweet onion, zippy red pepper flakes, and plenty of garlic. A nub of butter stirred in at the end gives the sauce a silky texture that's perfect for spooning over a wide range of Italian favorites.

2 tablespoons extra-virgin olive oil
1 cup minced sweet onion, such as Vidalia
Kosher salt
1 tablespoon minced garlic (from 2 to 3 cloves)
1/4 teaspoon red pepper flakes
2 cans (each 28 ounces) whole peeled tomatoes in juice, puréed
2 tablespoons unsalted butter

Steps:

  • Heat oil in a pot over medium-high. When it shimmers, add onion; season with 1 tablespoon salt. Cook, stirring occasionally, until soft and golden in places, 8 to 10 minutes (if onion colors too quickly, reduce heat to medium). Stir in garlic and red-pepper flakes; cook until fragrant, about 30 seconds.
  • Add puréed tomatoes and bring to a boil. Reduce heat to medium-low and simmer, stirring occasionally, until sauce is thickened slightly and reduced to 6 cups, 20 to 25 minutes. Remove from heat and stir in butter until melted and sauce is uniform in color. If not using it immediately, let the sauce cool to room temperature, then refrigerate it in an airtight container for up to five days, or freeze for up to three months.

  • In a large pot over medium heat, add garlic, onion, thyme and olive oil. Stir and cook for 4-5 minutes, until onions are translucent but not caramelized.
  • Add tomatoes and basil sprig, stir and bring to a boil. Turn the heat down to a bubbling simmer, cover and cook for 35 minutes while stirring occasionally.
  • Turn the heat off and transfer the sauce to a blender. You can also use an immersion blender and blend directly in the sauce pot. Add capers and blend until you achieve your desired consistency. I like to leave it a bit chunky – but a smooth sauce is also delicious!
