WESTERN OMELET
This is the ultimate Western omelet! You can even put red bell peppers and sausage in it, if you like.

Steps:
- Melt 1 teaspoon butter in a small skillet over medium heat. Add mushrooms, bell pepper, and green onions; cook until tender, about 5 minutes. Stir in ham until heated through, about 1 minute. Season with salt and pepper. Set filling mixture aside in a small bowl and keep warm.
- Beat eggs together in a bowl; season with salt and pepper.
- Heat the same skillet over medium-high heat. Add remaining 1 teaspoon butter; heat until foaming. Pour in eggs and cook for 30 seconds. Lift the edges of the omelet so that the uncooked egg runs under the cooked edges and comes into contact with the hot skillet. Shake and tilt the skillet to move the uncooked egg. Repeat until the top is set but still moist and soft, about 2 minutes.
- Spread the filling over one side of the omelet. Fold the other half over the filling and slide omelet onto a plate.

- Preheat oven to 350 degrees F (175 degrees C). Grease one 8x8 inch casserole dish and set aside.
- Beat together the eggs and milk. Add seasoning salt, ham, Cheddar cheese, Mozzarella cheese and minced onion. Pour into prepared casserole dish.
- Bake uncovered at 350 degrees F (175 degrees C) for 40 to 45 minutes.

I love this Omelet and it isn't complicated. I am about to cook it right now. I am thinking about cooking some thinly sliced potatoes to mix in. But basically this is MY OMELET..!!!

- 1. Beat eggs,water,salt and pepper together; set aside. In a black Ion skillet (small) brown ham, bacon etc onions and peppers, remove from pan; set aside. In medium size iron skillet sprayed with non stick and heated on med high on the stove burner. Cook beaten eggs until eggs are set. lifting edges so uncooked portions can flow to bottom. Top with ham, bacon mixture and top with another cheese slice. Fold omelet and top with grated sharp cheese 1/2 cup and a teaspoon full of chopped green chillies.

- Collect the components of your omelet then place them within arm’s reach. Once the process begins, it will go fast! When everything (including your choice fillings) are prepped and ready to cook, set an 8" non-stick skillet over medium-high heat then allow pan to come to temperature.
- Crack 3 eggs into a medium mixing bowl. Season with a pinch of salt and pepper then beat eggs with a fork or whisk until the egg whites and yolks are completely combined and mixture is a uniform, pale yellow.
- Add 2 tsp of butter to the skillet then allow it to melt until foam subsides and the butter just barely begins to brown. Immediately pour in beaten eggs then allow to set on the bottom of the pan for a few seconds. Carefully move the cooked egg from the outside edges of the skillet into the center then allow the liquid egg to take its place. Swirl pan if necessary to keep an even coating along the bottom of the skillet. Continue until no liquid remains—about 1–2 minutes.
- Once eggs have set, sprinkle cheese and additional filling on top of the eggs (½ cup of filling will do—overloading the omelet with ingredients will make it difficult to fold). Make sure to place the filling off to one side of the omelet then fold the other half over the filling.
