Green Beans with Potatoes and Smoked Turkey image

Provided by Kardea Brown

Categories     side-dish

Time 2h55m

Yield 4 servings

Number Of Ingredients 8

1 pound smoked turkey tails or wings and turkey leg
1 yellow onion, diced
1 tablespoon kosher salt
2 teaspoons freshly ground black pepper
3 to 4 large red or gold potatoes, peeled and diced into 1-inch pieces
2 pounds fresh green beans, trimmed
4 tablespoons unsalted butter
2 cloves garlic, minced

Steps:

  • Place the turkey tails and onion in a 4-quart Dutch oven and fill halfway with water. Season the water with the salt and 1 teaspoon pepper. Bring the water to a boil, then cover and simmer over low heat until the meat falls off the bones, about 2 hours. Remove and discard the bones and skin; return the meat to the pot.
  • Add the potatoes and green beans to the Dutch oven and simmer until the green beans are very tender and the potatoes can be pierced easily with a knife, about 20 minutes.
  • Meanwhile, melt the butter in a small skillet, then add the garlic and remaining teaspoon black pepper and cook for 2 minutes. When the beans and potatoes are done, scoop with a slotted spoon to a serving dish and drizzle with the garlic butter.

ALBANIAN STEWED GREEN BEANS AND POTATOES WITH SMOKEY SEITAN

Albanian Stewed Green Beans and Potatoes With Smokey Seitan image

In the heart of the Mediterranean, on the Adriatic and Ionian Seas, Albania is fast becoming one of the world's most interesting getaways. Still relatively unspoiled by globalization, an inspiring mixture of civilizations and cultures - making this European country truly unique. This Stewed Green Bean recipe is a great flavorful way to use green beans! The recipe makes enough for two hungry people, so if you have more people at home double the recipe. The recipe uses three tablespoons of olive oil so if you want to make this lower fat feel free to reduce some of the oil. You can replace the seitan with storebought "beef" or "chicken" chunks, or even veggie crumbles. Taken directly from the Vegan Foodie.

Time 1h40m

Yield 2 serving(s)

Number Of Ingredients 13

1 1/2 cups seitan, cut into bite size pieces (can use beef or chicken style chunks from Morningstar or other brand)
2 cups green beans, trimmed and cut in half
1 small red potatoes, cut into bite size pieces
1 medium onion, sliced thinly
3 -4 garlic cloves
1 medium tomatoes, diced (or one half of a large tomato)
1 teaspoon paprika
1/2 teaspoon oregano
1 pinch chili flakes (optional)
2 cups vegetable broth (or water, you may need to add more liquid)
3 tablespoons olive oil plus 1 tablespoon olive oil
1 1/2-2 teaspoons liquid smoke (may need to use more to get the right flavor, so adjust to your taste)
smoked salt, to taste (Optional, if you donà t have smoked salt use regular salt)

Steps:

  • Heat a medium pot over medium heat with 1 tablespoon of olive oil. When hot enough, add the seitan and saute until golden on all sides about 4-5 minutes. Towards the end at the liquid smoke and Smoked Salt. Remove from pot and set aside.
  • Now add about 2-3 tablespoons of Olive Oil to the pot. Add the onions and saute for a good 8 minutes until they are translucent and tender. If your pot has burned pieces from the seitan, deglaze it with a bit of vegetable broth. Add the garlic and saute for a minute until fragrant. Now it's time to add the green beans and potatoes. Saute the green beans and potatoes for about 5 minutes.
  • Now add the tomato, paprika, oregano, chili flakes and season with salt and pepper. Saute for another two minutes. Add the vegetable broth or water and bring to a boil and then to a simmer. After a couple of minutes add the seitan that you have set aside. Simmer the stew for about 45-50 minutes until the green beans and potatoes are tender. If the stew starts to get dry simply add some more broth. Re-season with salt and pepper to taste if necessary. Remember to not go heavy on the salt because the Smokey Seitan is salt already from the smoked salt. Let the stew sit for 15 minutes or you can eat it has soon has it finished cooking.
  • I like to serve these stewed green beans with some rice, bread, and a side salad or vegetable.

This recipe is delicious and very tasty. This dish is best served hot with plain rice. Green beans has plenty of nutrients, a good source of Vitamin A, also an excellent source of Vitamin C, Vitamin K and Manganese.

SMOKED SAUSAGE, GREEN BEANS, AND POTATOES

Smoked Sausage, Green Beans, and Potatoes image

Simple, but very good. I think this may be a Midwest, US kind of thing. Super fast and easy too! We serve the potatoes to the side, with some butter on them. I don't recommend the low-fat varieties with this, they don't seem to boil well.

STEWED GREEN BEANS

Stewed Green Beans image

My husband made up this recipe and to my surprise it was very delicious. We have this side dish about once a week. Give it a try I am a very picky eater, compared to most. We tried it with an orange pepper once as we didn't have a green pepper and it just wasn't the same, so I would recommend using the green pepper. Enjoy!!!

SEITAN PICCATA WITH OLIVES AND GREEN BEANS

Seitan Piccata With Olives and Green Beans image

From the Veganomicon. Try using their Simple Seitan or Seitan Cutlets recipe for this. Serve with mashed potatoes.

Provided by Eat Your Vegetables

Categories     Vegetable

Time 40m

Yield 4 serving(s)

Number Of Ingredients 15

1 lb seitan
1/3 cup all-purpose flour
olive oil
1 cup shallot, thinly sliced
4 garlic cloves, chopped
1/3 cup dry white wine
2 cups vegetable broth
1/2 teaspoon salt
fresh ground black pepper
1 pinch dried thyme
1/4 cup capers
1/2 cup olive, pitted and cut in half
2 -3 tablespoons lemon juice
3 tablespoons fresh parsley, finely chopped
1/2 lb green beans, trimmed

Steps:

  • Preheat a large skillet over medium-high heat.
  • Cut the seitan into long, thin pieces. Ideally the slices should be roughly 1/4" thick, 3" long and 2" wide.
  • Coat the bottom of the skillet with oil and let it get hot. Dredge half the seitan slices in flour to coat. Add to the pan and cook until lightly browed, about two minutes. Proceed to coat the other slices and repeat. Place the cooked seitan slices on a tray or plate covered with aluminum foil, to keep warm. Do not rise out the skillet or turn the heat off, as you're going to make the sauce in it.
  • Bring a pot of water to a boil for the green beans.
  • If there is enough oil left in the seitan pan to saute the shallots and garlic, then do so; if not, add a little oil and saute them for about 5 min, stirring often.
  • Add the white wine to the sauce and raise the heat to bring to a rolling boil. Add the vegetable broth, salt, black pepper, and thyme. Again, bring to a rolling boil and let the sauce reduce by half; this should take about 7-10 minute.
  • Add the capers and olives to heat through, about 3 minute
  • At this point, add the beans to the boiling water and let them cook for 2 min, then strain.
  • Add the parsley and lemon to the sauce and turn off the heat.
  • To serve: Make a pile of mashed potatoes. Place the seitan over the mashed potatoes and insert the green beans around the seitan, vertically. Use a ladle to douse everything in plenty of sauce.
