4 salmon fillets (, skin on best (150-180g/5-6oz each, Note 1))
Olive oil (, for cooking)
1/3 cup (85 ml) soy sauce (, low sodium)
2 tbsp lemon juice
3 tbsp honey
2 tbsp olive oil
2 garlic cloves (, minced)
Parsley, chives or green onion (, finely chopped)
Lemon slices

Steps:

  • Place marinade in a ziplock bag and mix to combine.
  • Add salmon and massage to coat. Marinate for 3 - 24 hours (1 hr minimum).
  • Take out of fridge 30 minutes prior to cooking.
  • Remove salmon onto plate, allowing excess marinade to drain off.
  • Pour remaining marinade into a small saucepan and simmer over medium high for 3 to 5 minutes until syrupy.
  • Pour into bowl/jug (some used for basting, some for serving).
  • Brush BBQ grills with oil. Then preheat to medium (or medium low for strong BBQ's).
  • Drizzle salmon with oil, the place onto the BBQ flesh side down (skin side up).
  • Cook for 3 minutes or until golden, then use tongs to carefully turn.
  • Brush the flesh with Sauce, then close BBQ lid.
  • Cook for 3 - 4 minutes, basting one more time halfway through, or until the internal temperature is 50C/120F(medium rare) or 55C/130F (medium).
  • Transfer salmon to plate and serve with remaining Sauce.

1-½ pounds skin-on salmon fillet
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon chili powder
1/8 teaspoon to ¼ cayenne pepper
¼ teaspoon sea salt
1 medium zucchini squash, grilled and chopped
1 medium yellow squash, grilled and chopped
1-½ cups cherry tomatoes, halved or quartered
1 jalapeno, seeded and chopped
1 clove large garlic, minced
1/4 cup red onion, finely chopped
4 leaves large mint, finely chopped
3 tablespoons lime juice
2 tablespoons olive oil
2 teaspoons agave nectar
sea salt

Steps:

  • Brush your grill with a wire brush to remove any food particles, and coat or spray the grill with cooking oil. Preheat the grill to medium-high (400 to 450 degrees F).
  • Mix together the seasoning and salt in a small bowl until well-combined. Drizzle the fish with olive oil and use your hands to gently coat the full surface of the flesh. Sprinkle the seasoning blend over the fish. NOTE: If you're performing this step ahead of time, store salmon in a seal-able container or plastic bag in the refrigerator until you're ready to grill.
  • Place the salmon fillet on the grill skin side down (I put it over the hottest part of the grill) and cover. Cook for 3 to 6 minutes, or until the skin is super crispy and fish is opaque. Carefully flip and cook an additional 2 to 4 minutes, or until salmon reaches desired done-ness. For rare-in-the-center salmon, cook about 2 minutes per side. Adjust the grill time up for salmon fillets that are thicker than 1 inch.
  • Transfer salmon to a serving platter and serve with grilled zucchini salsa!
  • Grill the zucchini and yellow squash while you're grilling the fish. To do so, cut the zucchini into 1/4 to 1/2-inch thick rounds, lightly coat with olive oil, and sprinkle with salt and pepper. Place zucchini on the grill and cook until grill marks appear, about 2 minutes. Carefully flip and cook on the other side until grill marks appear, another 1 to 2 minutes. Transfer to a cutting board and chop when cool enough to handle.
  • Transfer the chopped grilled zucchini and yellow squash to a mixing bowl. Add the remaining ingredients for the salsa and toss until well-combined.

1½ pounds Alaska Sockeye Salmon
Cooking spray
1½ teaspoons kosher salt
½ teaspoon freshly-ground black pepper
½ cup white wine
2 Tablespoons melted butter or extra-virgin olive oil
2 Tablespoons finely minced fresh garlic
2 Tablespoons chopped fresh herbs

Steps:

  • Remove Alaska Sockeye salmon from refrigerator 15 minutes before cooking. Heat grill to 375°F. Cut 2 pieces of wide, heavy-duty aluminum foil about 6-inches longer than the salmon side. Stack the foil pieces (shiny side down) on a baking sheet and spray generously with cooking spray. Place the salmon, skin side down, in the middle of the foil. Fold the foil sides and ends up (1 to 2-inches) to make a shallow pan around the salmon, leaving at least a 1-inch margin around the fish. Season salmon with salt and pepper. In a small bowl, mix together the wine, butter, garlic and herbs. Spoon the mixture over the top of the salmon, drizzling with any remaining liquid. Carefully transfer the foil pan to the center of the preheated grill. Do not cover the salmon with foil or close the foil over the salmon. Close grill cover and cook for 10 to 13 minutes, cooking just until fish is lightly translucent in the center - it will finish cooking from retained heat. Remove from the grill and let rest a few minutes before serving.
  • Roast in an oven preheated to 375°F, cooking 12 to 15 minutes, until lightly translucent in the center. Be sure to let the salmon rest a few minutes before serving.

2 lbs wild alaskan salmon fillets (8 4-oz filets)
kosher salt
fresh ground black pepper
1/2 cup peanut oil
3 tablespoons soy sauce
3 tablespoons rice wine vinegar
3 tablespoons sherry wine
4 tablespoons scallions, chopped (green onions)
1/2 cup brown sugar
1/2 cup pure honey
2 large garlic cloves, minced
1 tablespoon fresh ginger, minced
1 teaspoon onion powder
2 tablespoons lemon zest
1 teaspoon crushed red pepper flakes
2 teaspoons sesame oil
1 dash liquid smoke flavoring
1 pinch kosher salt
cooking spray (to oil the grates) or vegetable oil (to oil the grates)
1 lemon, cut into wedges

Steps:

  • Wash the salmon filets and pat dry with paper towels; salt and pepper to taste. Place the filets in a large glass casserole dish.
  • In a medium size mixing bowl, combine together the peanut oil, soy sauce, vinegar, sherry, green onions, brown sugar, honey, garlic, ginger, onion powder, lemon zest, red pepper flakes, sesame oil, liquid smoke and salt. Whisk ingredients together, blending well.
  • Pour marinade over the salmon filets and cover tightly with plastic wrap. Marinate in the refrigerator for 4 to 6 hours.
  • After marinating, generously coat each filet with the marinade and wrap separately in heavy duty aluminium foil.
  • Before firing up your outdoor grill/BBQ, lightly oil the grates. Cook one of two ways (1) COALS: Set your coals about 5 inches from the grate; bbq the salmon fillets 5 minutes per side, or until fish just flakes with a fork. (2) GAS GRILL: Preheat grill for high heat. Place filets on the grates and grill for 7-8 minutes each side, or until fish is flaked easily with a fork.
  • COOK'S TIPS: Take care not to overcook your salmon - It will lose its juices and flavor if cooked too long. Discard any leftover marinade, OR bring it to a boil, cook for 5 minutes, and spoon over salmon when serving.
  • For a complete meal, serve the grilled salmon fillets with lemon wedges, a chilled bottle of Merlot, scoop of fluffy white rice, and a lightly-dressed fresh spinach salad. Be sure to brace yourself for NO LEFTOVERS!

1/2 cup honey
1 dash liquid smoke flavoring
1/2 cup apple cider vinegar
1 (4 lb) whole salmon fillets

Steps:

  • Preheat grill for high heat.
  • In a small bowl, mix together brown sugar, honey, liquid smoke, and vinegar.
  • Brush one side of the salmon with the basting sauce. Place the salmon on the grill, basted side down. After about 7 minutes, generously baste the top, and turn over. Cook for about 8 more minutes, then brush on more basting sauce, turn, and cook for 2 minutes. Take care not to overcook the salmon as it will loose its juices and flavor if cooked too long.

½ cup peanut oil
4 tablespoons soy sauce
4 tablespoons balsamic vinegar
4 tablespoons green onions, chopped
3 teaspoons brown sugar
2 cloves garlic, minced

2 teaspoons crushed red pepper flakes
1 teaspoon sesame oil
½ teaspoon salt

Steps:

  • Place salmon filets in a medium, nonporous glass dish.
