Recipe from the Food Network. States that this is a traditional Nigerian dinner. You have to plan ahead (to soak the beans), but otherwise it comes together quite quickly. And it's vegetarian to boot!

1/2 lb dried black-eyed peas
2 small onions
1 red pepper
salt
white pepper
olive oil
2 ripe tomatoes
1 green pepper
1/4 cup chopped fresh parsley leaves

Steps:

  • Soak peas overnight in lots of water. Drain. Peel the outside skin from the peas.
  • In a processor, pulse the 1 onion and red pepper to coarsely chop. Add soaked peas and puree to a paste. Transfer to a bowl and using a whisk, whisk the mixture adding salt, white pepper and just a little soaking liquid -- not too much as the mixture needs to retain its shape for frying.
  • Using an ice cream scoop, form into balls about the size of a ping-pong ball. Drop into a pot of hot olive oil, heated to 360 degrees F. Fry until golden brown. Remove to paper towel-lined plate. Season again with salt and pepper.
  • Make a quick dipping sauce by pulsing 2 seeded tomatoes, 1 onion, 1 green pepper and some parsley in food processor. Add olive oil and season with salt and pepper. It should be a little chunky, but smooth enough to stick to the fried akara.

6 bananas, well ripened
1 cup flour
1/4 cup sugar
1/4 cup water
1 teaspoon nutmeg

Steps:

  • Mash bananas with a fork or use blender to make into a pulp.
  • Add flour.
  • Mix water and sugar to make a syrup.
  • Add syrup and nutmeg to bananas and flour (add more water, if needed, to make batter to pancake consistency.) Mix well.
  • Fry like pancakes in oiled frying pan until golden brown.

  • First of all, start by skinning the beans. Simply soak the beans in water for 3 minutes. After about 3 minutes, the skin of the beans should start wrinkling a little bit. Place the beans in a food processor, with some water, just enough to cover it. Pulse the food processor about 5-6 times to agitate the beans. This process breaks the beans up and separates the skins off the beans. Be careful, some water might splash out of the processor while pulsing the beans.
  • Pour the skinned beans in a bowl. Rinse several times to separate the beans from the skins, draining the skins with the water with each rinse. The skins should come off easily because the skins are lighter and should float to the top.
  • After the beans have soaked, drain the water that they have been soaking in, and rinse the beans one more time.

  • Soak the beans for about 30 minutes till the skin is swollen and peel off the skin by rubbing it between your palms, or simply use a blender by pulsing it a couple of times till the skin falls off.
  • Put the beans into a large bowl and separate the skin from the beans by adding enough water and gently swirling the beans around so that the skin can float. Pour off the skins into a colander. Repeat this process until the beans are clean.
  • Pour the clean beans inside the blender, add the water, red bell pepper, habanero pepper, salt, bouillon powder, and crayfish, and blend into a paste.
  • Pour the batter into a large bowl and whisk it together until it's light and fluffy. Hand whisk for about 3 to 4 minutes or an electric hand mixer for about a minute or two.
