AH, SUNFLOWER!
This cocktail - essentially a tequila sour softened by elderflower liqueur and gilded with a garnish of flower petals and toasted sunflower seeds (which add a surprising crunch) - aspires to capture some of the unambiguous cheerfulness most of us associate with sunflowers and serve it in a glass. It's named for William Blake's decidedly ambiguous poem, "Ah! Sunflower."

- Shake tequila, elderflower liqueur, lime juice and egg white with ice. Strain into a glass filled with ice. Add bitters. Garnish with seeds and flowers.

KALIMOTXO
Some might consider the kalimotxo (pronounced cal-ee-MO-cho) a guilty pleasure; I've received more than a few skeptical glances when I've ordered it at bars in New York. But I don't feel an iota of contrition when I drink this Basque-country classic. It couldn't be easier: equal parts red wine (some say the cheaper the better, but that's up to you) and cola. I like a squeeze of lemon juice for a little brightness, and maybe a slice of lemon or orange to dress it up. But purists might consider even those modest additions a little fussy. The overall effect is surprisingly sangria-esque, minus all that fruit-chopping and waiting, and wonderfully refreshing. If you can find cola made with cane sugar rather than corn syrup, all the better, but the drink is still fine with whatever you've got on hand. The soda's caffeine actually makes the kalimotxo a fine pick-me-up: an ideal afternoon drink when you know you've still got a long day, and night, ahead.

ROSé SANGRIA
What's pink, pretty and packs a punch? This rosy riff on sangria, which is loaded with red and pink fruit for a festive, crowd-friendly treat. Be sure to plan ahead: The fruit needs to macerate for at least 4 hours to soak up the flavors and to soften. For the wine, choose a rosé that is neither too sweet nor too dry. It should taste good to you on its own, but since it will be mingling with juice, liquor and a whole lot of fruit, go with something inexpensive.

- Bring a quart of unsalted water to a simmer in a 2 qt sauce pan, then blanch the sunflower head for 3-4 minutes. Remove the sunflower bud from the pot, then transfer to a saute pan with the vegetable stock and a good pinch of salt. Cover the pan, then simmer until the sunflower bud is tender when pierced with a knife, about 3-4 minutes depending on size.
- Make sure the buds are tender, since they won't be able to be cleaned properly otherwise. Allow the sunflower buds to cool, then transfer to a cutting board and trim with a paring knife first removing the outer leaves, then scraping out any flower petals from the inner portion of the bud.
- Do not remove the base of the stem, it's a great part to eat, and is part of the plant. Transfer the buds to a container with a lid and refrigerate until needed if not using immediately. The recipe is easily scaled depending on how many heads you have.
