AGAVE LEMONADE



Agave Lemonade image

Inspired by my daily "free lemonade" that I used to make at the old KFC in grade school, here's a recipe so simple and refreshing that you'll be shocked there are only four ingredients!

Yield makes 6 servings

Number Of Ingredients 4

14 lemons
4 1/2 cups filtered water
3/4 cup agave nectar
5 cups ice

Steps:

  • Wash 12 of the lemons and cut in half. Juice these lemon halves using an electric juicer.
  • Fill 6 glasses three-quarters full of ice and set aside. Slice the remaining 2 lemons lengthwise and set aside. In a large pitcher, combine the lemon juice, water, and agave nectar and stir until fully combined. Pour the lemonade over ice, garnish with lemon wedges, and serve.

AGAVE MAPLE SYRUP

Number Of Ingredients 2

1 cup agave nectar
3 tablespoons maple flavor, or to taste

Steps:

  • Put the agave nectar in a small bowl. Add the maple flavor and stir until fully combined. Taste and adjust maple flavor to desired intensity. The syrup can be stored at room temperature, covered tightly, for up to 1 month.

1/2 cup agave
1/4 cup lemon juice
1/4 cup orange juice

Steps:

  • Combine all ingredients in small bowl stir until well blended. Refrigerate in airtight container until ready to use. Use syrup to sweeten tea and glaze fruits.

BASIL LEMON SYRUP

This recipe makes enough for several batches of the vodka gimlets or lemonade; any left over would also give a nice hit of flavor to a glass of iced tea.

4 cups packed fresh basil sprigs (top 4 inches; from a 1/2-pound bunch)
4 cups water
2 cups sugar
9 (4- by 1-inch) strips lemon zest

Steps:

  • Bring all ingredients to a boil in a medium saucepan, stirring until sugar is dissolved. Let stand at room temperature, covered, 1 hour, then transfer to an airtight container and chill until cold, about 1 hour. Strain syrup thourough a sieve into a bowl, pressing hard on and then discarding solids.

No sugar in this recipe, but I promise you won't miss it. You can find agave nectar in health food stores. Also makes 20 great tarts.

1 cup water
¾ cup agave nectar
3 tablespoons cornstarch
2 tablespoons all-purpose flour
2 ½ lemons, zested and juiced
¼ teaspoon salt
2 tablespoons butter
4 egg yolks, beaten
1 baked pie crust
4 egg whites
½ teaspoon lemon juice
2 tablespoons agave nectar, or more to taste

Steps:

  • Whisk water, 3/4 cup agave nectar, cornstarch, flour, zest and juice from 2 1/2 lemons, and salt together in a saucepan; bring to a boil just until lemon mixture coats a spoon, 3 to 5 minutes. Stir butter into lemon mixture until melted; remove saucepan from heat.
  • Whisk 1/2 cup lemon mixture with the egg yolks in a bowl to temper the yolks. Return saucepan to medium-low heat and slowly whisk tempered egg yolks into remaining lemon mixture until thickened, 3 to 5 minutes. Spoon lemon mixture into pie crust.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat egg whites and 1/2 teaspoon lemon juice in a clean bowl using an electric mixer until soft peaks form; add 2 tablespoons agave nectar and continue beating until stiff peaks form. Spoon egg white mixture on top of lemon mixture, making sure to completely cover the lemon mixture.
  • Bake in the preheated oven until meringue is golden brown, about 10 minutes.

This simple syrup is to be used as an equivalent of a regular sugar-based simple syrup in cocktails, coffee and tea drinks, etc. About Agave: Agave is a natural sweetener used in place of sugar. It has a glycemic index that is 40 percent lower than refined sugar and agave nectar is an optional sweetener for people who are diabetic; the sugars from agave nectar are released slowly into the bloodstream, keeping blood sugar at a more consistent level.
