This classic adobo recipe is simple to make and famous with all who have tasted it. It has been modified to be a bit more saucy than traditional adobo, it is delicious served over rice.

2 tablespoons vegetable oil
1 (3 pound) chicken, cut into pieces
1 large onion, quartered and sliced
2 tablespoons minced garlic
⅓ cup white vinegar
⅔ cup low sodium soy sauce
1 tablespoon garlic powder
2 teaspoons black pepper
1 bay leaf

Steps:

  • Heat the vegetable oil in a large skillet over medium-high heat. Cook chicken pieces until golden brown on both sides, then remove. Stir in the onion and garlic; cook until they soften and brown, about 6 minutes.
  • Pour in vinegar and soy sauce, and season with garlic powder, black pepper, and bay leaf. Add the browned chicken, increase the heat to high, and bring to a boil. Reduce heat to medium-low, cover, and simmer until the chicken is tender and cooked through, 35 to 40 minutes.

Pineapple Pork Adobo is a delicious twist on the classic Filipino dish. With tender pork cubes, juicy pineapple chunks, and a sweet and salty sauce, it's perfect with steamed rice!

1 tablespoon canola oil
3 pounds pork butt, cut into 1 1/2-inch cubes
1 onion, peeled and chopped
1 head garlic, peeled and minced
salt and pepper to taste
1 cup pineapple juice
1/2 cup vinegar
1/2 cup soy sauce
1/2 cup water
1 cup pineapple chunks

Steps:

  • In a wide pan over medium-high heat, heat oil. Add pork and cook until lightly browned. Season with salt and pepper to taste.
  • Add onions and garlic and cook, stirring regularly, for about 1 to 2 minutes or until softened.
  • Add pineapple juice and vinegar. Allow to boil, uncovered and without stirring, for about 3 to 5 minutes.
  • Add soy sauce and water and bring to a boil.
  • Lower heat, cover, and continue to cook for about 40 to 50 minutes or until pork is fork-tender and sauce is reduced.
  • Add pineapple chunks and cook for another 1 to 2 minutes or until heated through.
  • Season with salt and pepper to taste, if needed. Serve hot.

2 tablespoons vegetable oil, or as needed
1 onion, chopped
1 head garlic, crushed
2 pounds pork belly, cut into 1-inch squares
¾ cup soy sauce, or to taste
¼ cup water
1 ½ teaspoons whole black peppercorns
2 bay leaves
¼ cup cane vinegar
3 tablespoons brown sugar, or more to taste
1 ½ teaspoons dried basil leaves, or more to taste

Steps:

  • Heat oil in a skillet over high heat. Add onion and garlic; cook and stir until fragrant, about 1 minute. Add pork; cook just until evenly browned, 2 to 3 minutes per side. Stir in soy sauce, water, peppercorns, and bay leaves. Reduce heat to low and cover stockpot. Cook until liquid is at a simmer, 1 to 2 minutes.
  • Uncover stockpot, add vinegar, and cook without stirring until vinegar dissipates and liquid thickens, 3 to 5 minutes. Stir in brown sugar and basil, cover stock pot, and cook until pork is tender and cooking liquid has thickened to sauce consistency, 10 to 15 minutes.

6 duck legs
salt and freshly ground black pepper to taste
1 tablespoon vegetable oil
1 large onion, sliced
8 cloves garlic, minced
1 ½ cups chicken broth
1 cup seasoned rice vinegar
½ cup soy sauce, or to taste
2 teaspoons sambal chili paste, or other hot pepper sauce to taste
2 bay leaves

Steps:

  • Season duck legs with salt and black pepper.
  • Heat vegetable oil in a large, deep skillet over medium-high heat; add duck legs, skin side down, and cook until browned, 3 to 4 minutes per side. Remove duck legs and drain all but 1 tablespoon of duck fat from the pan.
  • Cook onion in reserved duck fat over medium heat until onion begins to turn translucent, 3 to 4 minutes. Add garlic; cook and stir until fragrant, 1 to 2 minutes.
  • Stir chicken broth, rice vinegar, soy sauce, sambal chili paste, and bay leaves into onion mixture; bring to a simmer. Return duck legs to the skillet, loosely cover, and simmer until duck legs are tender and easily pierced with a fork, about 2 hours.
  • Remove cover from the skillet, increase heat to high, and cook until sauce is thick, about 5 minutes; season with salt and black pepper to taste.

1 onion, peeled and sliced thinly
1 head garlic, peeled and minced
1 1/2 pounds pork shoulder or belly, cut into 2-inch cubes
1 1/2 pounds chicken, cut into serving parts
1 cup vinegar
1/2 cup soy sauce
1 cup water
2 bay leaves
salt and pepper to taste

Steps:

  • In a wide pan over medium heat, heat oil. Add onions and garlic and cook until softened.
  • Add pork and cook, turning as needed, until lightly browned. Cook, stirring occasionally, for about 7 to 10 minutes.
  • Add chicken and cook, stirring occasionally, until lightly browned and juices run clear.
  • Add vinegar and bring to a boil, uncovered and without stirring, for about 2 to 3 minutes.
  • Add soy sauce, water, and bay leaves. Continue to boil for about 2 to 3 minutes.
  • Lower heat, cover, and cook for about 30 to 40 minutes or until meat is tender and sauce is reduced.
  • Season with salt and pepper to taste. Serve hot.

  • Bring the chicken to a boil over high heat. Lower the heat, cover and let simmer for 30 minutes, stirring occasionally. Remove the lid and simmer until the sauce is reduced and thickened and the chicken is tender, about 20 more minutes. Serve with steamed rice.
