Steps:

  • Combine 1 can black beans (drained), 2 diced plum tomatoes, 1/2 chopped small red onion and 1/4 cup chopped cilantro in a bowl. Add the juice of 1 lime, 2 tablespoons olive oil, 1 tablespoon chopped chipotle in adobo sauce and 1 teaspoon honey and stir. Season with salt.

24 oz pork tenderloin, trimmed, cur into 4 oz pieces
6 Tbs paprika
2 Tbs ground black pepper
2 Tbs coarse salt
1 Tbs chile powder
3 pinches cayenne pepper
1/2 C arugula, loosley packed
Pico de Gallo
2 C black beans, cooked
4 med Onions, diced
1/2 C Red onion, diced
1/2 C Green onion, chopped
1/2 C Cilantro, chopped
2 Tbs Jalapeno pepper, minced
2 Tbs fresh Lemon juice
1/4 Tsp salt
1 Tbs Chile Powder

Steps:

  • For Pork: Preheat oven to 350 F.. In small bowl, mix paprika, salt, pepper, chili powder, brown sugar, and cayenne. Rub both sides of tenderloin pieces with spice mixture. Pan sear pieces in oven safe skillet until golden brown on both sides. Transfer to oven until done ( 6 - 8 minutes for each 1 inch of thickness ). For Pico de Gallo: Mix all ingredients. Serve 1/2 C over each tenderloin piece and garnish with Arugula.

1/2 cup arugula, loosely packed
Pico de gallo
2 cups cooked black beans
4 medium tomatoes, diced
1/2 cup diced red onion
1/2 cup chopped green onions
1/2 cup chopped fresh cilantro
2 tbsp minced jalapeño pepper
2 tbsp fresh lemon juice
1 tbsp chili powder
1/4 tsp salt

Steps:

  • For pork: Preheat oven to 350°F. In small bowl, mix paprika, black pepper, salt, chili powder, sugar, and cayenne. Rub both sides of each tenderloin piece with spice mixture. 2 tablespoons chili powder
1 tablespoon GOYA® Adobo All-Purpose Seasoning with Pepper
1 teaspoon ground cumin
1 teaspoon packed dark brown sugar
⅛ teaspoon ground cinnamon
2 tablespoons GOYA® Extra Virgin Olive Oil
1 (2 pound) boneless pork loin roast

Steps:

  • Heat oven to 450 degrees F. In small bowl, mix together chili powder, Adobo, cumin, dark brown sugar and cinnamon until well combined. Stir olive oil into Adobo mixture until completely saturated.
  • Using paper towels, pat pork loin dry. Rub pork all over with Adobo mixture. Transfer pork to foil-lined roasting pan. Cook until pork is dark golden brown and instant-read thermometer registers 145 degrees F when inserted into center of loin, about 35 minutes.
  • Transfer pork to platter; tent with foil to keep warm. Let rest 10-15 minutes before slicing. Serve with accumulated juices.

1 tbsp. chili powder

Steps:

  • Pork: Heat oven to 350. Mix together paprika, salt, black pepper, chili powder, sugar, and cayenne in a bowl. Thoroughly rub sides of each piece of pork with spice mixture. Heat an oven safe skillet (large cast iron pan works well) over medium-high heat and pan-sear each piece of pork on both sides until golden brown to seal in juices. Transfer pan to oven until pork is completely done (6 -8 minutes for each inch of thickness). May take longer. Pico de gallo: combine all ingredients. Garnish plate with arugula, add pork,and sprinkle 1/2 cup pico de gallo over the top.
