Steps:
- Cut chicken into 1-inch pieces.
- Heat 3 inches oil in large heavy saucepan over medium-high heat until oil reaches 375°; adjust heat to maintain temperature.
- Meanwhile, beat egg and water in large bowl until well mixed.
- Add flour, salt and pepper stirring to form smooth batter.
- Dip chicken pieces into batter, draining off excess.
- Fry chicken, a few pieces at a time, in hot oil about 4 minutes or until golden brown.
- Drain on paper towels.
- Serve with sauce of your choice.

Steps:
- 1. Preheat oven to 375°F.
- 2. Place the first 6 ingredients in a food processor until chicken is finely chopped and ingredients are combined.
- 3. Place the bread crumbs and parmesan cheese in a shallow bowl or on a plate and stir to combine.
- 4. With moistened hands, roll 1 tablespoon of chicken mixture between your palms and flatten it into a "nugget" shape.
- 5. Gently press nuggets into bread crumbs to evenly coat them.*.
- 6. Place nuggets on a cooling rack. Place cooling rack over a foil-lined baking sheet.
- 7. Lightly spray nuggets with cooking spray.
- 8. Bake for 15 minutes and serve.**.
- * To freeze, place nuggets on a sheet tray after this step and freeze for one hour. Place nuggets in labeled freezer bags for up to 3 months. When ready to cook, follow the directions starting with step #6.
- ** If you want your nuggets to be golden brown, place under the broiler for 2 minutes after cooking.

- 1. First, preheat the oven to 350°F.
- 2. Then combine the grated cheese and the seasonings. Line a shallow baking pan with foil. (Do not omit this step, or you'll still be scrubbing the pan for days!).
- 3. Melt the butter in a shallow bowl or pan.
- 4. Dip each piece of chicken into the butter, and then into the seasoned cheese, coating well.
- 5. Arrange in the foil lined pan. Bake for 30-45 minutes at 350°F.
- 6. Then -- kick yourself that you didn't make a double recipe!

- Beat eggs and milk together in a bowl.
- Cut chicken to desired size and dip in egg/milk mixture.
- In another bowl, combine flour, salt blend (I use Morton Nature's Season seasoning blend) and pepper. Coat chicken pieces in flour mixture.
- Heat oil in frying pan ( I use about 1/4 cup) and brown chicken on both sides. Drain on paper towel, then place in a 9 x 13 baking dish. Cover and bake at 325 for 30 minutes.

- First make the beer batter. Add the flour, cornstarch and salt in a medium bowl. Slowly add in the beer while whisking until it looks like a thin pancake batter.
- Fill a large, deep pot halfway with canola oil or vegetable oil. Set the heat to a medium-high let it come to about 375-400 degrees.
- While your oil is heating up, add all the ingredients for the glaze in a medium sauce pot. Stir and let it about 20 minutes. Cover and keep warm until you’re done frying the chicken.
- When your oil is ready, take your chicken pieces, a few at a time, and coat it with the beer batter. Let some of the excess drain off and lower it into the oil with a slotted spoon or a frying spider. I did this in about 4 batches, you don’t want to crowd the pot and bring the temp down too much. Fry the chicken for about 5 minutes, flipping it over during cooking. Drain on a paper towel lined plate and repeat with the remaining chicken.
