FIVE STAR FRENCH ONION SOUP
Onions slowly simmered in a rich beef stock and served with cheese-topped bread make up this classic French onion soup. Consider it gourmet comfort food.

- Melt the butter in a large saucepan over medium heat. Add the onions and cook, stirring occasionally, for 1-2 minutes. Add the flour and stir until well blended. Add the black pepper, bay leaf, and paprika. Reduce the heat to low and let the mixture cook for 10 minutes. While stirring, slowly add the beef stock and wine. Let the mixture simmer for 2 hours. Season to taste with salt. Remove the pan from the heat and let cool. Place in the refrigerator overnight. When ready to serve, return the pan to the stove and heat over medium heat. Remove the bay leaf. Preheat the oven broiler. Place 1 cup of the soup individual oven-proof soup bowls. Top each with a couple slices of French bread and then top the bread with a slice of Swiss cheese. Place the soup bowls under the broiler and let cook for 5 minutes or until the cheese is bubbly and browned. Carefully remove the soup bowls from the oven and serve hot. Warn guests that the bowls are very hot.

- Place butter in a 5-qt. slow cooker. Top with sweet and red onions; sprinkle with pepper. Cook, covered, on low until onions are tender, 5-6 hours., Stir in broth, water, wine, herbs and Worcestershire sauce. Cook, covered, on low until flavors are blended, 2-3 hours. Remove herb sprigs and bay leaf., To serve, preheat broiler. Place bread on a baking sheet; broil 4 in. from heat until lightly toasted, 1-2 minutes per side. Top bread with cheese; broil until cheese is melted, 1-2 minutes. Divide soup among eight bowls; top with cheese toasts and serve immediately.

- Stir together onions, melted butter, sugar, salt, and pepper in a 6-quart slow cooker until onions are fully coated. Place thyme and bay leaf on onion mixture. Cover and cook on HIGH, stirring once halfway through, until onions are deep golden brown and caramelized, 6 to 7 hours.
- Remove and discard thyme and bay leaf. Stir in broth and vinegar. Cover and cook on HIGH until thoroughly heated, about 30 minutes.
- Preheat oven to broil, with oven rack about 6 inches from heat. Spoon soup into 6 ovenproof ramekins; place on a large rimmed baking sheet.
