This easy cilantro lime sauce is a zesty spin on ranch! You don't even need a blender. Use it for grain bowls, tacos, and more.

1/3 cup very finely chopped cilantro
2 tablespoons lime juice (1 lime)
1/2 cup Greek yogurt
1/4 cup mayonnaise
1 pinch sugar
3/4 teaspoon each garlic powder and onion powder
1/2 teaspoon dried dill
1/4 teaspoon each kosher salt and ground black pepper

Steps:

  • Chop the cilantro as finely as possible. Juice the lime.
  • In a medium bowl, mix the cilantro and lime juice with the Greek yogurt, mayonnaise, sugar, garlic powder, onion powder, dill, salt and pepper. (Alternative: You can blend all ingredients using an immersion blender or in a food processor if you'd like a smooth, light green sauce.) Eat immediately or refrigerate until serving.

This quick and creamy five-ingredient sauce will lend Thai flavors to salads, noodles, poultry, seafood and even sandwiches. Red curry paste, available at most larger grocery stores, is a great flavor-boosting ingredient to have on hand for adding heat and a subtle sweetness to sauces, soups, stews and stir fries. A little goes a long way and a small jar will keep in your refrigerator for several months after opening.

1/2 cup creamy peanut butter
1/2 cup canned unsweetened coconut milk
3 tablespoons rice vinegar
2 tablespoons low-sodium soy sauce
1 tablespoon Thai red curry paste

Steps:

  • Combine the peanut butter, coconut milk, vinegar, soy sauce and curry paste in a blender and blend on high until very smooth, scraping down the sides of the blender jar once or twice with a rubber spatula. The sauce should be the consistency of thick pancake batter. If it's too thick, add warm water a tablespoon at a time, blending to combine. (Depending on the brand of peanut butter and coconut milk, you may need to add up to 2 tablespoons of water.)
  • Transfer to a bowl. The sauce can be refrigerated in an airtight container for up to five days.

A delicious creamy topping for chicken or fish. Can be served cold or hot. I personally prefer it cold on top of hot broiled lemon pepper mahi mahi with brown rice and steamed spinach. Garnish dish with cilantro leaves after topping with sauce.

It also keeps well in the refrigerator so you can use it throughout the week.

1/4 cup fresh lemon juice
2 small cloves garlic, crushed
2 teaspoons Dijon mustard

  • Combine the cashew butter, lemon juice, garlic, mustard, hot sauce and 1/3 cup warm water in a blender and blend on high until very smooth, scraping down the sides of the blender jar once or twice with a rubber spatula. 2 pounds bone-in, skin-on chicken thighs (about 6 thighs)
6 cups chicken broth
2 cups tightly packed spinach (3 ounces)

Steps:

  • Put the chicken in a large pot and cover with the broth. Bring to a boil over medium-high heat, reduce the heat to low and simmer for 40 minutes.
  • Transfer the chicken from the pot to a cutting board. Skim the surface of the broth with a slotted spoon to remove any skin that's floated to the surface. Remove the meat from the chicken bones and shred with two forks; discard the skin. Add the meat back to the pot along with the spinach.
  • Turn the heat to medium until the spinach wilts, about 1 minute. Swirl the pesto into the soup and season with salt.

And also it helps emulsify the sauce into beautiful texture.
