5-INGREDIENT APPLE PIE
This straightforward recipe for apple pie is from the vegan chef and cookbook author Chloe Coscarelli. It calls for storebought crusts, so you really can throw it together and have it in the oven in about 15 minutes.

Steps:
- Preheat oven to 375 degrees. Lightly grease a 9-inch pie pan.
- Whisk together sugar, flour and cinnamon in a large bowl. Add apples and mix with a large spoon until apples are evenly coated.
- On a lightly floured surface, roll out 1 dough until it is about 1/8 inch thick. Carefully lift the dough and fit it into the prepared pan, letting about 1 inch hang over the sides. Fill the pie shell with the apple filling.
- On a lightly floured surface, roll out the second disc of dough until it is about 1/8 inch thick and cut out eight 1-inch strips. My lattice technique does not require any weaving. Instead, lay four strips horizontally on top of the filling, leaving about 1/2 to 3/4 inch between strips. You may want to use a metal spatula to transfer the dough strips from your work surface to your pie. Lay the remaining four strips diagonally over the first four strips, creating a diamond-like shape between strips. Fold the overhanging dough over the edges of the lattice top. Crimp the dough between your two index fingers to make a decorative border
- Brush the top and edges of the pie crust with nondairy milk and sprinkle with sugar for an extra sweet and crisp top. Bake for 50 to 55 minutes, until the crust is nicely browned.

CHEMICAL APPLE PIE (NO APPLE APPLE PIE)
This is a recipe for apple pie made without apples. It has all the characteristics of an apple pie with apples. If you didn't know better, you'd think that there really were apples in it. This is an old chemistry lab experiment to teach the limits of human senses.

- Preheat oven to 450 degrees F (225 degrees C).
- Roll out pastry and set aside. Bring water to a boil in a large saucepan.
- In a small bowl mix together sugar and cream of tartar. Add mixture to boiling water. Stir, then add crackers, one at a time. Boil for 3 minutes, but do not stir.
- Pour cracker mixture into pastry-lined pie pan. Sprinkle crackers with cinnamon and dot with butter or margarine. Cover with top pastry. Seal edges and cut steam vents in top.
- Bake in preheated oven for 30 minutes, until crust is golden brown. May need to cover top pastry partway through baking to prevent overbrowning.

- Gather 8 medium apples. Or if you don’t have 8 medium apples use 7 small granny smiths and 3 medium galas like I did.
- No PHOTO for this step but it involves dropping one of the pies and spending the next 30 minutes cussing, cleaning, mopping and hoping the second pie turns out fine.
