- Preheat the oven to 400°F (200°C). Lightly grease a 9 x 13-inch (22 x 33cm) baking dish with nonstick spray.
- Melt the butter in a large saucepan over medium heat. Add the onion and sauté until softened and very fragrant, about 5 minutes. Stir in the garlic, flour, Italian seasoning, and salt and cook for another minute, until thickened.
- Slowly pour in the chicken broth and milk and stir to combine. Bring to a simmer, stirring constantly. Once the mixture has thickened, 10-12 minutes, stir in the peas, carrots, and tuna.
- Spread the cooked egg noodles in the prepared baking dish.
- Pour the sauce over pasta in the pan and stir to combine. Add 2 cups of cheddar cheese and stir to incorporate. Spread the casserole in an even layer, then sprinkle the remaining cup of cheese on top.
- In a small bowl, use a fork to mix together the cracker crumbs, Parmesan, and olive oil. Sprinkle over the casserole.
- Bake the casserole for 15-20 minutes, or until the top is lightly browned and bubbling.

Easy crock pot meal! And it has that scrumptious, crispy, chewy, browned cheese at the edges. Oh man! To die for! Ha ha! Most times I make this with 2 cans of tuna, but it's also delicious with 1 can each of tuna & clams. Don't drain the liquid from the cans, it adds a delicious flavor!

- 1. Spray crock pot with cooking spray.
- 2. DO NOT DRAIN LIQUID FROM CANS.
- 3. Cook egg noodles in boiling, lightly salted water for about 2 minutes only. Drain.
- 4. Add 1/2 noodles into crock pot.
- 5. Add tuna & clams with liquid. (Or if you like, you can just use 2 cans of tuna, undrained)
- 6. Add remainder of the noodles.
- 7. Add in undiluted soup. Add mushrooms with liquid.
- 8. Top with shredded cheeses.
- 9. Cook on LOW for 5 hours. Give a quick stir, loosening the scrumptious browned cheeses along the sides. Serve.

- 1. In saucepan, cook pasta in salted boiling water till al dente. Drain and return pasta to pan, set aside. 2. In small skillet, melt 1 tbsp butter and saute onions till tender, add lemon pepper seasoning, set aside. 3. In large saucepan, melt 2 tbsp butter over low heat. Sprinkle remaining cheeses over tomatoes. 13. Bake at 400 for 20 minutes (Cover pan) 14. Uncover and cook additional 10-15 minutes till hot & bubbly.

I got this recipe from an old Pillsbury book. They had the lighter, healthier version vs the older higher fat version. I opted for the higher fat version....its comfort food, don't mess with it! (if you want to make the ligher version just substitue low fat milk, reduced fat cheese and 98% fat free soup)

- 1. Drain juice from clams and save liquid; chop clams.
- 2. Melt butter; blend in flour and seasonings.
- 3. Mix clam juice with milk to make 1 1/2 cups; add to flour blend slowly while cooking over low heat, stirring constantly until mixture is thick and smooth.
