1 whole pineapple - cut up and frozen overnight
1 cup of coconut milk (or milk of choice)

Steps:

1. Place frozen chunks of pineapple and coconut milk into a food processor or high powered blender. Turn on food processor and blend until the consistency becomes creamy. You may have to stop several times and scoop down the pineapple. If desired, put mixture in a plastic bag with the end cut off and put in ice cream cups. Makes about 3-4 servings.
2. *** Recipe says you can also add mangoes, add bananas or shredded coconut if you wish.

This homemade pineapple ice cream is reminiscent of the infamous 'Dole Whip' at Disney®. This version packs great pineapple flavor but it more smooth and creamy. Make this a float by dishing the ice cream into a glass and pour pineapple juice over it and top with whipped cream. This is a refreshing summer treat!

Ingredients

1 cup heavy whipping cream
6 fluid ounces pineapple juice (such as Dole®)
⅓ cup white sugar
1 teaspoon fresh lemon juice

Steps:

Whisk cream, pineapple juice, and sugar in a bowl until sugar is dissolved; stir in lemon juice. Refrigerate until well chilled, at least 6 hours.
Transfer pineapple mixture to an ice cream maker and process according to manufacturer's instructions.
