COPYCAT LUNCH LADY PIZZA

Who else has fond memories of their school cafeteria rectangular pizza slices? I do and decided to create a version at home - Copycat Lunch Lady Pizza.

2 2/3 cups bread flour (or all-purpose flour)
3/4 cup non-fat dry milk powder
2 tbsp sugar
1 packet quick rise or pizza yeast
1 tsp salt
1 2/3 cup warm water
2 tbsp vegetable oil
1/2 lb Italian sausage
1/2 lb lean ground beef
1 jar (12 oz) pizza sauce
8 oz part-skim mozzarella cheese (shredded)

Steps:

  • Grease a metal (1/2-sized) sheet pan (18"x13") and line it with parchment paper. Preheat oven to 475 degrees F.
  • In a large bowl, whisk together the flour, milk powder, sugar, yeast and salt. Microwave the water for about 1 minute and add the oil. Pour the oil and water mixture into the flour mixture and stir with a spatula until a batter is formed. If there are a few lumps remaining, it's OK.
  • Spread the pizza dough into the prepared sheet pan, being sure the dough is spread evenly and to the edges of the pan. If you are having trouble with the dough spreading to the edges of the pan, allow the dough to rest for at least 5 minutes before spreading it with your fingertips.
  • Meanwhile, brown the Italian sausage and ground beef together until cooked completely. Drain if necessary and set aside.
  • Bake the un-topped crust for 6 - 8 minutes. Remove the crust and top with the pizza sauce, then the cooked sausage and beef mixture and then the shredded cheese.
  • Return the pizza to the oven and bake for an additional 8 - 10 minutes, or until cheese is melted and beginning to brown.
  • Slice into rectangles and serve.

1 1/2 lb ground beef
1 can(s) tomato paste
2 tsp italian seasoning
1/2 tsp garlic powder with parsley
1 small onion diced (optional)
16 slice pizza pepperoni slices (my addition not in orginal school recipe)
8 slice american cheese
8 cherry tomatoes (we omit these)
4 hamburger buns toasted. (each half will be anopen faced sandwitch)
1/2 c parmesan cheese

Steps:

  • 1. Mix hamburger. tomato paste, Italian seasoning, garlic powder, Parmesan cheese and diced onions together. shape into 8 burgers. and flatten onto a lipped baking pan. put in oven on 400 turning once until done. Top with 2 pieces of pepperoni, then braking the single in half Cris cross over top of burger. Broil to melt cheese and put each burger on a 1/2 of a bun. making 8 open faced burgers. Top with a cherry tomato cut in half

JIM LAHEY'S NO-KNEAD PIZZA MARGHERITA

This is a great recipe for a simple, thin crust pizza. It's from Jim Lahey (of no-knead bread fame) who now runs a popular NYC pizzeria called Co. The recipe was printed in New York Magazine (Jul 12, 2009). If you don't have a pizza stone, this works well in a cast iron skillet. The recipe requires very little time and effort but the dough must be started the day before.

Number Of Ingredients 12

3 cups all-purpose flour or 3 cups bread flour, more for dusting
1/4 teaspoon instant yeast
1 1/2 teaspoons salt
1 1/4 cups water
1 vine-ripened tomatoes (about 5 oz.) or 1 heirloom tomato (about 5 oz.)
1 pinch salt
1/4 teaspoon extra virgin olive oil
5 tablespoons tomato sauce
2 ounces buffalo mozzarella (about 1/4 ball)
basil leaves
1 tablespoon extra virgin olive oil
salt

Steps:

  • To make dough: In a large bowl, mix the flour, yeast, and salt. Add water and stir until blended (the dough will be very sticky). Cover with plastic wrap and let rest for 12 to 24 hours in a warm spot, about 70 degrees.
  • Place the dough on a lightly floured work surface and sprinkle the top with flour. Fold the dough over on itself once or twice, cover loosely with plastic wrap, and let rest for 15 minutes.
  • Shape the dough into 3 or 4 balls, depending on how thick you want the crust. Generously sprinkle a clean cotton towel with flour and cover the dough with it. Let the dough rise for 2 hours.
  • To make sauce: Blanch tomato for 5 seconds in boiling water and quickly remove. Allow to cool to the touch. Peel the skin with your hands and quarter the tomato. Remove the jelly and seeds, and reserve in a strainer or fine sieve. Strain the jelly to remove seeds, and combine resulting liquid in a bowl with the flesh of the tomatoes. Proceed to crush the tomatoes with your hands. Add salt and olive oil and stir.
  • To make pizza: Place pizza stone on the middle rack of the oven and preheat on high broil. Stretch or toss the dough into a disk approximately 10 inches in diameter. Pull rack out of oven and place the dough on top of the preheated pizza stone. Drizzle 5 generous tablespoons of sauce over the dough, and spread evenly. Try to keep the sauce about ½ inch away from the perimeter of the dough. Break apart or slice the buffalo mozzarella and arrange over the dough. Return rack and pizza stone to the middle of the oven and broil for approximately 6 minutes. Remove and top with basil, olive oil, and salt.

From the 1950s-60s school cafeteria recipes. My school district called theses "Sweepsteaks" and I loved them. The original recipe I found was for 50 servings, so you may need to adjust seasonings to your taste, as cutting large recipes down, the amounts don't always adjust easily.

1/2 lb lean ground beef
1/8 c onion flakes, dehydrated
1/2 tsp garlic powder
1/2 tsp salt
1/8 tsp ground black pepper
1/4 c tomato paste
1/2 c water
1/4 tsp each dried basil, dried oregano, dried marjoram, dried thyme
2 oz mozzarella cheese, shredded
4 large hamburger buns, split
8 slice american cheese

Steps:

  • 1. Preheat oven to 400F.
  • 2. Brown ground beef. Drain.
  • 3. Add onions, granulated garlic, salt, pepper, tomato paste, water, mozzarella and seasonings. Mix.
  • 4. Place split rolls on sheet pan. Divided meat mixture evenly among bun halves. Top each half with a slice of American cheese.
  • 5. Bake until heated through, about 8 minutes. Each serving is 2 open-faced halves.

  • Preheat oven to 425F. Brush a 10x15 baking pan with a bit of olive oil and sprinkle with a small amount of cornmeal or semolina flour. Use your fingertips to press the dough into the pan, keeping the dough even in thickness all the way to the edge.
  • Brush the top of the dough with more olive oil and use a fork to create pricks all over. Bake for 5-7 minutes. If bubbles begin to form while baking, reach in with a fork and poke them to let the gas escape.
  • While crust is pre-baking, mix together the tomato sauce, tomato paste, italian seasoning, garlic powder, onion powder, black pepper, and sugar. Taste and adjust seasonings as needed - add a bit more sugar if sauce still tastes too acidic.
  • Spread sauce over pre-baked crust, going all the way to the edge. Top with meat, veggies, pepperoni, or any other desired toppings. Add a generous layer of mozzarella cheese on top.
