A fantastic award winning chili con carne, with beef, pork, three kinds of chilis, a perfect balance of spice and heat.

3 Anaheim chiles, roasted, peeled, chopped
3 poblano chiles, roasted, peeled, chopped
12 ounces of bacon, cut crosswise into 1/4-inch strips and sautéed until almost crisp. Reserve 3 tablespoons of bacon fat.
3 tablespoons bacon fat (rendered from the bacon)
2 tablespoons vegetable oil (canola, grape seed or your favorite)
2 red bell peppers, seeds and ribs removed, diced
2 jalapeño peppers, seeds and ribs removed, minced
2 yellow onions, peeled and diced
1 head garlic, peeled and minced (10-12 garlic cloves, 6 tablespoons minced garlic)
1 pound boneless beef chuck, trimmed of fat and gristle, cut into 1/2-inch cubes
2 pounds ground beef
1 pound sweet Italian sausage, casings removed
3 tablespoons chili powder (Try using 3 different chili powders for great depth of flavor - I use ancho, chipotle and Mexican)
2 teaspoons cayenne pepper (Half this amount for less heat)
2 teaspoons ground coriander
2 teaspoons ground cumin
2 teaspoons granulated garlic
2 teaspoons granulated onion
2 teaspoons hot paprika (not smoked)
2 teaspoons kosher salt
2 teaspoons freshly ground black pepper
2 cups tomato sauce (passata, not ketchup for those in the UK)
8 ounces tomato paste
12 ounces of your favorite beer (I use an IPA because I like the hoppy flavor)
1 cup chicken stock
2 15-ounce cans kidney beans, with juice
2 15-ounce cans pinto beans, with juice
Optional Garnishes:
1 bunch green onions, thinly sliced or 1 red onion, finely chopped
Shredded cheddar cheese or Monterey Jack
Sour cream

Steps:

  • Preheat the oven to broil (500ºF) Set an oven rack at the top, directly under the broiler. Spread the chiles out on a low-sided oven tray and roast for 15-20 minutes, turning peppers with tongs every five minutes, until their skins are about 60-70% blackened on all sides. Put the hot peppers directly into a paper bag. Roll down the top of the bag so they're tightly contained. Let them sit and steam for 15-20 minutes until the skins are loosened and easy to peel off. Peel off skins, remove seeds and membranes, and chop.
  • Add the bacon grease and oil to a large heavy pot or Dutch oven (6-quart), over medium-high heat. Add the chopped chiles, red bell peppers, jalapeño peppers and onions. Cook for 5 minutes or until the vegetables just start to become translucent. Add garlic and cook 1 minute longer. Transfer all the sautéed vegetables to a bowl and set aside. No need to wash the pot, you'll use it to brown the meat.
  • Add the cubed beef chuck to the pot and cook, stirring often, until lightly browned on all sides, about 4 minutes. Add the ground beef and sausage and cook for 7-10 minutes, stirring to break up the sausage and ground beef, until the meat is no longer pink. Return the cooked vegetables to the pot along with the reserved bacon.
  • chili powders, cayenne, coriander, cumin, granulated garlic, granulated onion, paprika, salt and black pepper. Cook, stirring, for 1 minute, until fragrant.
  • Add the tomato sauce and paste. Cook, stirring, for 2 minutes, to combine. Add beer, chicken stock, kidney beans with their liquid and pinto beans with their liquid. Bring to a boil, lower to a simmer, and cook for 2 hours, uncovered.
  • Ladle chili into bowls. Top with garnishes or put garnishes into small bowls for self serve.

2 tablespoons vegetable oil
2 3/4 pounds tri-tip sirloin, cut into 1/4-inch cubes
1 tablespoon chili powder
3/4 cup finely chopped onion
5 medium cloves garlic, pressed into a paste
1 (14 1/2-ounce) can chicken broth
2 canned whole green chiles, seeded and finely chopped
1 cup beef broth
1/2 cup prepared Mexican-style tomato sauce
1/2 cup prepared tomato sauce
1 teaspoon hot sauce
1/2 cup California-style chili powder
2 1/4 tablespoons New Mexico-style chili powder
1 1/4 tablespoons ground cumin
1 teaspoon salt
1/2 teaspoon arbol chili powder
1/2 teaspoon New Mexico-style chili powder
1/4 teaspoon monosodium glutamate
Pinch brown sugar
Pinch jalapeno powder

Steps:

  • Start the first group of ingredients: Heat the oil in a large skillet over medium-high heat. Working in 2 batches, add the beef and chili powder and cook, stirring occasionally, until well browned. Drain the beef.
  • Transfer the beef to a large soup pot with the onion, garlic, and broth. Bring to a boil, lower the heat, and simmer, stirring occasionally, for 1 hour.
  • Add the second group of ingredients, return to a simmer, and cook, stirring occasionally, and for 1 hour.
  • Add the third group of ingredients, return to a simmer, and cook, stirring occasionally, for 45 minutes.
  • Add the fourth group of ingredients and simmer 15 minutes more. Divide among bowls and serve.

HEARTY SIRLOIN CHILI

2 tablespoons vegetable oil
1/2 cup flour
Salt and pepper
2 pounds sirloin, bite size chunks
2 large onions, chopped
1 green bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
2 jalapenos, seeded and chopped
3 cloves garlic, chopped
2 tablespoons chili powder
1 tablespoon cumin
1 teaspoon oregano
12-ounce bottle ale
2 cups low-sodium beef stock
4 cups crushed tomatoes
2 cups canned black beans, drained and rinsed
2 cups canned kidney beans, drained and rinsed
Garnish: Shredded Cheddar, red onion, scallions, sour cream

Steps:

  • Heat oil in large heavy pot over medium high heat. In a pie plate combine salt, pepper and flour with a fork. Toss sirloin cubes with flour to coat. Shake off excess flour. Brown sirloin in pot on all sides and remove meat to a plate. If necessary add more oil to pan and add onions. Cook onions over medium heat until they begin to soften. Stir in green, red and jalapeno peppers and cook for 3 to 5 minutes. Add chili powder, cumin and oregano. Return browned meat to pan and pour in beer and beef stock. Bring to a boil and cover and reduce heat to a simmer. Cook for 45 minutes or until meat is tender. Add crushed tomatoes and cook for 20 minutes. Stir in black and kidney beans and gently simmer for 10 minutes. Garnish with Cheddar, onion, scallions and sour cream.

Steak Chili image

This steak chili is the best beef chili recipe ever. That's a big statement, but it's true. It has a rich flavor and the tender chunks of slow-cooked chuck steak are dreamy. We go easy on the beans, but you can either omit them or add extra as you like. You'll want to keep this steak chili recipe in your back pocket so you can pull it out every weekend.

2 lb stewing beef (cut into bite-sized pieces)
1 teaspoon EACH: salt and pepper
2 tablespoons oil (divided)
1 large onion (minced)
4 cloves garlic (minced)
2 stalks celery (minced)
5.5 ounce can tomato paste
3 tablespoons chili powder (see notes)
1 teaspoon EACH: oregano and cumin
3 cups beef bone broth (see notes)
28 ounce can crushed tomatoes
2 tablespoons honey
14 ounce can kidney beans (drained and rinsed (omit for paleo chili))

Steps:

  • Dry the beef well with paper towels then sprinkle the salt and pepper over the top.
  • Heat 1 tablespoon of the oil in a large pot over medium-high heat. Add half of the beef and brown well on 2 sides. Remove it from the pan and repeat with the remaining beef, adding more oil as needed. Remove the second batch of browned beef from the pot.
  • Add the remaining tablespoon of oil to the pan. Add the onion and cook until it is soft and starts to brown, about 5 minutes. Add the garlic and celery and cook for 2 minutes.
  • Push the veggies to the side of the pan and add the tomato paste. Let it cook for 2-3 minutes, or until it becomes sweet smelling. Add the chili powder, oregano, and cumin to the pot and mix.
  • Pour the beef broth into the pot and scrape the bottom of the pot with your mixing spoon to remove any of the dark stuck on bits. Add the crushed tomatoes, honey, and browned beef and bring the pot to a boil. Reduce the heat to low and cover the pot. Very gently simmer the steak chili for 2 hours. (See notes)
  • Just before serving, add the beans and let them warm. Season to taste with salt.

1 cup dry textured vegetable protein (TVP)

1 (3 ounce) can tomato paste
1 cup frozen corn
1 zucchini, chopped

1 bell pepper, chopped
1 jalapeno pepper, minced
3 tablespoons chili powder (or more to taste)
2 teaspoons cumin
2 teaspoons garlic powder
1 teaspoon dried oregano
1 (15 ounce) can pinto beans or 1 (15 ounce) can black beans

Steps:

  • Pour the boiling water over the TVP and let sit for 5 minutes.
  • Combine with the remaining ingredients except the beans.
  • Cover and simmer for 1 hour.
  • Add the beans and simmer for an additional 30 minutes.

2 tablespoons vegetable oil
2 medium yellow onions, chopped 1/4 '' dice
1 shallot, diced fine
2 tablespoons garlic, fine chopped

16 ounces coarse ground beef (70/30 or 80/20 blend)
12 ounces sirloin, cubed into 1/2 chunks (prime grade is best)
1 pint plum tomato (drain, but reserve juice)
1/2 teaspoon instant espresso, fine-ground
1 cup tomato paste
1 pint beef stock
4 ounces dark brown sugar
4 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon dried oregano
1 teaspoon ground cayenne pepper
1/4 teaspoon paprika
1 teaspoon ground coriander
1 teaspoon kosher salt
1 quart kidney bean
3 jalapeno peppers, seeded & chopped
1 serrano pepper, seeded & chopped
12 ounces dark beer (optional, but Guinness recommended)

Steps:

  • Heat oil in a heavy-bottomed stock pot over medium-high heat. Add ground beef and cook until browned thoroughly, drain off excess fat.
  • Add sirloin, garlic, onions, shallots, green and red bell peppers and continue to cook for an additional 10 minutes, making sure to thoroughly brown the sirloin and get a good carmelization on the vegetables.
  • Add the tomato paste, espresso and dried seasonings and sugar. Saute and thoroughly mix over medium heat for 10 minutes.
  • Add beans, stock, beer and peppers and let simmer for 1 hour over medium-low heat, stirring the mixture every 10 minutes. Reduce heat to low and continue to simmer for additional 1 hour, using the reserved drained tomato juice to thin if needed.

I made this recently using chopped sirloin, it was really good! If you have any dried chipotle chili powder then throw in a tablesoon. You can use wine in place of the beer if desired. Serve this with crusty buns and a side salad, this dish is delicious! I strongly advise to make this a day ahead and refrigerate, the flavors will blend together to create a more intense flavor.

3 -5 tablespoons vegetable oil (more as needed)
3/4 cup flour
2 teaspoons seasoning salt
1/4 teaspoon cayenne pepper
2 lbs sirloin, cut into 1-inch cubes
2 onions, chopped

1 -2 teaspoon dried chili pepper flakes (optional, add in if you like extreme heat!)
1 large green bell pepper, seeded and chopped
1 large red bell pepper, seeded and chopped
2 jalapenos, seeded and finely chopped (I just use the ones packed in the jar)
2 -4 tablespoons chili powder (or to taste)
2 -3 tablespoons cumin (or to taste)
2 teaspoons dried oregano
2 cups consomme or 2 cups beef broth
1 (12 ounce) bottle beer
4 cups crushed tomatoes
2 cups canned black beans, drained and rinsed
2 cups red kidney beans, drained and rinsed
salt and pepper
shredded cheddar cheese
chopped onion
sour cream

Steps:

  • In a shallow dish mix together flour, seasoning salt and cayenne pepper.
  • Heat oil in a large Dutch oven or pot.
  • Toss the sirloin with the flour mixture to coat, then brown well on all sides shaking off any excess flour then remove to a plate or bowl.
  • In the same pot saute the onions and dried chili flakes (if using) for about 3 minutes.
  • Add in green and red bell peppers with jalapeno peppers and garlic; cook for about 3-4 minutes.
  • Add in chili powder, cumin and oregano, then return the browned beef back to the pot along with any juices from the plate or bowl.
  • Pour in beer and consumme or beef broth; stir with a wooden spoon and bring to a boil.
  • Cover and reduce heat to a simmer; cook 1-1/2 hours or until the beef is tender.
  • After the 1-1/2 hours, add in the crushed tomatoes and cook for another 35-40 minutes.
  • Add in black beans and kidney beans, season with salt and pepper; simmer for another 20 minutes.
  • Ladle into bowls then top with sour cream cheese and onions.
  • Delicious!
