HALF-HOUR PUDDING CAKE (MONTREAL PUDDING)



Half-hour Pudding Cake (Montreal Pudding) image

My Mom used to make this and I still make this pudding-like cake. During the baking the batter rises to the top and a pudding like sauce forms underneath the crust. There is also a lemon version.

1 cup all-purpose flour
⅓ cup white sugar
1 teaspoon baking powder
½ cup raisins
½ cup milk
1 cup packed brown sugar
2 cups boiling water
1 tablespoon butter
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter one 2 quart casserole dish.
  • Sift the flour, white sugar and baking powder together. Add the raisins and stir in the milk. Spoon batter into the prepared dish.
  • Combine the brown sugar, boiling water, butter and vanilla. Gently pour over the batter. Do not stir.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes. Serve warm.

1 c flour
2 tsp baking powder
1/8 tsp salt
2 tsp sugar
2 Tbsp vegetable shortening
1 c raisins
1/2 c milk

Steps:

  • 1. Mix above ingredients together in a medium large pyrex bowl. Dough will stick to bowl.
  • 2. Mix together: 1 cup brown sugar, 1-3/4 cup boiling water and 1 tablespoon butter: Pour over dough. Loosen it from bottom of bowl so that it floats on top. Bake at 375 deg. for 30-35 minutes. Serve with ice cream, whipped or pouring cream. A tasty, fast dessert. Serves 8-10.

1 package (3 ounces) cook-and-serve vanilla pudding mix
1 cup whole milk
1/3 cup water
1 cup raisins
1/2 teaspoon vanilla extract
1-1/2 cups plain yogurt
Optional: Whipped topping and ground nutmeg

Steps:

  • In a saucepan, combine pudding mix, milk and water; cook over medium heat until thickened. Remove from the heat; stir in the raisins and vanilla. Cool for 15 minutes; stir in yogurt. Spoon into individual desserts dishes. Chill for 2-3 hours. If desired, garnish with whipped topping and sprinkle with nutmeg.

4 3/4 cups (or more) milk (do not use low-fat or nonfat)
2/3 cup medium- or short-grain white rice
1/3 cup sugar
2 tablespoons (1/4 stick) unsalted butter
1 cinnamon stick
Pinch of salt
1/3 cup golden raisins
2 teaspoons vanilla extract
2 large egg yolks

Steps:

  • Combine 4 cups milk, rice, sugar, butter, cinnamon stick and salt in heavy large saucepan. Simmer over medium-low heat until rice is tender and mixture is creamy, stirring frequently, about 1 hour. Remove from heat. Discard cinnamon stick. Stir in raisins and vanilla.
  • Pour 3/4 cup milk into heavy small saucepan. Bring to simmer. Whisk egg yolks in medium bowl to blend. Gradually whisk hot milk into beaten yolks. Return mixture to same saucepan. Stir over medium heat until thermometer registers 160 °F, about 2 minutes (do not boil). Stir egg mixture into rice mixture.
  • Transfer rice pudding to large nonmetal bowl. Cover and chill until cold, about 30 minutes. (Can be prepared 1 day ahead. Keep chilled.)
  • Thin rice pudding with more milk, if desired. Spoon into bowls and serve.
