This is the best when made with fresh picked blueberries! It is a beautiful sight with a lattice top.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Mix sugar, cornstarch, salt, and cinnamon, and sprinkle over blueberries.
- Line pie dish with one pie crust. Pour berry mixture into the crust, and dot with butter. Cut remaining pastry into 1/2 - 3/4 inch wide strips, and make lattice top. Crimp and flute edges.
- Bake pie on lower shelf of oven for about 50 minutes, or until crust is golden brown.

- Preheat oven to 400 degrees F (200 degrees C). Roll out half the pastry and line a 9-inch pie pan; trim crust to the rim of the pan. Loosely cover with plastic wrap and refrigerate.
- Combine sugar, tapioca, and cinnamon. Toss sugar mixture with blueberries in a mixing bowl and sprinkle with lemon juice. Let stand fifteen minutes. Meanwhile, roll out the top crust into a 10-inch circle. Cut into half-inch strips. Pour blueberry mixture into chilled pie shell and dot with butter. Add the pastry strips one at a time, weaving a lattice. Flute edges.
- Place pie on a baking sheet to catch drips. Bake in the preheated oven for 40 to 50 minutes, until filling is bubbly and crust is light brown. Cool completely before serving.

BLUEBERRY PIE WITH FROZEN BERRIES

- Preheat the oven to 425 degrees F (220 degrees C).
- Put frozen blueberries in a pot along with sugar, cornstarch, lemon juice, and salt. Mix gently so that the blueberries will get covered with cornstarch; the cornstarch will help to thicken the pie filling. Cook over medium-high heat, stirring occasionally so it will not burn to the bottom, about 15 minutes.
- While the pie filling is cooking, combine flour, 3/4 cup butter, and salt in a large mixing bowl. Mix with a fork until crumbles form. Slowly add cold water and mix until incorporated, adding more water as needed.
- Divide dough into 2 equal pieces. Shape each piece into a ball. Roll out 1 dough ball with a rolling pin into a 10-inch circle. Transfer pie crust into a 9-inch pie dish. Trim the edge of the pie crust with scissors and crimp the rim with your fingertips and knuckles.
- Remove pie filling from heat and pour into the pie crust. Sprinkle 1 tablespoon butter pieces on top of the filling; the butter will melt and make a thin surface over the filling that will help you weave the strips of crust for the lattice on top.
- Roll the top crust into a 10-inch circle. Cut into 1/2-inch strips with a sharp paring knife or pastry wheel. Start with the longest strips and lay the first 2 in an X in the center of the pie. Alternate horizontal and vertical strips, weaving them in an over-and-under pattern. Use the shortest strips for the edges of the lattice. Fold the ends of the lattice strips under the edge of the bottom crust and flute the crust.
- Melt 1 teaspoon butter in milk by microwaving in a microwave-safe cup in 10-second intervals. Brush over the top of the pie to get a nice golden brown crust.
- Bake in the preheated oven until golden brown and bubbly, about 30 minutes.

This is very good! My hubby loved it and I think it was gone by the next morning between him and the kids. It's wonderful heated with vanilla ice cream on the side...yummy! Prep time does not include making the pie crust.

- Heat oven to 425 degrees.
- Prepare pastry.
- Stir together sugar, flour and cinnamon; mix with berries.
- Turn into pastry lined pie pan; sprinkle with lemon juice and dot with butter.
- Cover with top crust which has slits cut in it for venting; seal and flute.
- Cover edge with 2 to 3 inch strip of aluminum foil to prevent excessive browning; remove foil last 15 minutes of baking.
- Bake 10 inch pie 45 to 50 minutes or until crust is brown and juice begins to bubble through slits in crust.

A larger pastry for deep dish pies. Again, use ice-cold water and don't fiddle with the dough too much - your crust will come out perfect!

- Mix flour and salt. Cut in the shortening until particles are the size of peas.
- Sprinkle with the water, 1 tablespoon at a time, tossing with a fork until all the flour is moistened and the pastry almost cleans the side of the bowl. Additional water can be used if necessary.
- Divide pastry into 2 equal parts. Gather each portion into a ball.
- Working with one ball at a time: flatten into a disk on a lightly floured surface. I place my pastry between sheets of plastic wrap or wax paper - which makes it easier to lift onto the pie pan.
- Roll the pastry into a circle that is 2 inches larger around than the inverted pie pan. Carefully ease the pastry into the pan and press it firmly against the bottom and sides.
- Pour in the pie filling and then cover with the remaining pastry. Remember to cut slits in the top to allow steam to escape. Bake according to pie recipe directions.

BLUEBERRY PIE
This was my grandmother's recipe, painstakingly reproduced by my mother. I say painstakingly, because Gram didn't write anything down, sometimes didn't measure, and would invariably forget to pass on one ingredient, lol. But, my mother persevered and we now have the recipe recorded for posterity. The hilarious thing, though, is that my husband decided to make this a couple of days back. And it was amazing! Except, I kept crunching through sugar (I like crunchy food, so this was a bonus). I said, "It's almost like you didn't mix the sugar in very well." He said, "It didn't say to mix!"

- Mix first four ingredients (may need up to 3 tablespoons of flour). Place in pie shell. Layer a pie shell above - crimp the edges together and make slashes in the top to vent.
